Standard Pour bartender wins local cocktail battle, will represent DFW at national competition

For a lot of people, the idea of making a few drinks brings to mind mixing a little vodka with soda over ice, but for the craft bartenders who strutted their stuff before the judges earlier this week, it meant much, much more – firing up an original cocktail and then knocking out a dozen tequila classics, all within minutes. And with flair, to boot.

Jorge Herrera is on his way to New York City because he managed to make the whole thing look easy. A veteran of Plano’s Mexican Sugar who joined The Standard Pour in Uptown earlier this year, Herrera took top prize at Monday’s Espolón Cocktail Fight for the right to represent the DFW area at the tequila brand’s national finals in November.

Held at the DEC on Dragon, the event – part culinary competition, part WWF – was a raucous, “luchador-style” affair pitting Dallas drink slingers against their Fort Worth brethren.

Here, in photos, are some of the highlights.

In the first matchup, Devin “El Guapo” McCullough of The People’s Last Stand, at Mockingbird Station, took on Amber “Waves of Pain” Davidson of Fort Worth’s Bird Cafe. Contestants had two minutes to set up their stations and three minutes to prepare their original cocktails for the judges.

Next up was Jonathan “Manila Killa” Garcia, also of The People’s Last Stand, against Jermey “Big Jerm” Elliott of Citizen, in Uptown. Garcia appeared in a conical hat while Elliott fired up the crowd by stripping down to shorts and a tank top.

With competitors taking the stage with painted faces, or in skimpy or outlandish outfits, supporters embraced the costumed spirit of things and advantaged the nearby photo booth.

The third matchup pitted Cody Barboza, of Deep Ellum’s Armoury D.E., against Jason Pollard of The Usual, in Fort Worth. Both Barboza’s mescal-fueled El Rico and Pollard’s One Hour Break — which leaned savory with Averna and molé bitters — earned second-round status.

In the fourth duel, Brittany “B-Day” Day of Thompson’s, in Fort Worth, faced off against Geovanni “Geo” Alafita of Knife, near Mockingbird Station. Day’s Smoke In The Morning went smoky-sweet with mezcal, maple syrup and Allspice Dram while Alafita’s preciously presented Rosario combined tequila with mildly bitter Aperol, cilantro and jalapeño.

In addition to taste, presentation and how well the tequila shone through, contestants were judged on showmanship. In addition to yours truly, the panel included chef Nick Walker of The Mansion at Turtle Creek, Bonnie Wilson Coetzee of FrontBurner Restaurants and Frederick Wildman brand ambassador Austin Millspaugh.

The fifth and final first-round match was easily the most entertaining as the typically understated Jorge “Don Juan” Herrera of The Standard Pour took the platform with a lovely lady on each arm in his duel against Sean “McDoozy” McDowell of Thompson’s. But Herrera put some shine on his show by completing his deceptively simple drink with plenty of time to spare, then lighting up a cigar and preening before the crowd as McDowell continued to race against the clock.

Herrera’s Carolina cocktail was lush with cigar-infused Grand Marnier, while McDowell’s tart Trade With Mexico bundled both Espolón blanco and reposado with tea and homemade ginger beer. Both advanced to the second round.

In the second round, the top six contestants each had to crank out 10 El Diablos — a lesser known tequila classic featuring reposado tequila, créme de cassis, lime and ginger beer — within a few minutes’ time.

Herrera’s and Davidson’s were dubbed mas macho by the judges and both advanced to the final round, where each had to craft a Margarita using Espolón blanco, a Paloma with Espolón reposado and an Old Fashioned with Espolón añejo — again, within a few minutes.

A taste of each drink, then the judges conferred, taking into account the entire night. It was Herrera’s performance that was judged best overall, which means he’ll be competing at Espolón’s national finals in early November.

Brian McCullough, co-founder of The Standard Pour, said he had no doubt that the Uptown bar’s attention to efficiency on busy weekend nights helped prepare Herrera for the competition’s fast-paced demands.

Between that and Herrera’s previous training at FrontBurner, which owns Mexican Sugar, “he’s been working toward winning this ever since he started working here,” McCullough said.

To watch a normally subdued guy transform into the very picture of confidence made him proud.

“Seeing him do that was like seeing him come out of his shell,” McCullough said.

If you’re familiar with Dallas’ music scene, you might have caught Mwanza “Wanz” Dover singing lead for the band Black Dotz or spinning records at venues such as Midnight Rambler, Nova, Red Light and the Double Wide.

Last fall, as the Dallas Observer reported, he took a dive off a stage and hurt himself; what he thought was a minor ailment turned out to be a much more serious intestinal injury. He made it to the hospital just in time for emergency surgery that apparently saved his life. Further hospitalization and another surgery would follow.

The trouble is, like a lot of people who make their living as creative types, he has no medical insurance. And so, on Sunday, Midnight Rambler — among the finest of the city’s craft-cocktail joints — will hold “Ramble For A Cause,” a DJ-driven night of music to benefit Dover and help pay what bar co-owner Christy Pope describes as “a mounting stack of medical bills.”

The event, which runs from 9 p.m. to 2 a.m., is sponsored by Hochstadter’s Slow & Low rye whiskey and Four Corners Brewery. There will be drink specials and prize raffles, and proceeds will help pay Wanz’s medical bills. DJ’s will include Travis Box, Gabriel Mendoza, Jeff Paul and Marcos Prado and Dover himself.

Next Sunday, Dec. 13, you’ve got the chance to give and get at the same time. It’s a pre-Christmas miracle.

The 5th annual Trigger’s Toys Fantasy Draft Main Event takes place Dec. 13, with five all-star teams of bartenders and industry professionals staffing five tongue-in-cheek pop-up bars under one roof. Tito Beveridge himself, of Tito’s Vodka, will be there. The entire team of New York-based The 86 Co, will be there. YOU SHOULD BE THERE.

Bryan Townsend was at a hospital in Grapevine with his newly trained dog when he met a nurse distressed over a young girl who’d been in therapy for a year, unable to socialize with others. “She’s not getting any better,” the nurse said.

Townsend himself had been stuck for a while, in a corporate job where he wasn’t very happy. In 2008, he left and began focusing on other things. His dog, Trigger, was one of them.

He told the nurse: Maybe she’d like to give Trigger a treat?

The girl did.

“Then I wondered if she’d follow Trigger through a tunnel,” Townsend said. “And she did. The nurse went and got the girl’s mom; it was the first time she’d ever crawled.”

Inspired by the experience, Townsend – now a vice president and sales director for spirits outfit The 86 Co. – launched Trigger’s Toys, a nonprofit that provides toys, therapy aids and financial assistance for hospitalized kids and their families.

“It instantly changed this girl’s life just because I was throwing treats for my dog,” Townsend says.

Last year’s Trigger’s Toys event, including sponsorships, raised about $100,000 for the cause. This year’s total is already at $87,000. “That’s the most we’ve had going in,” said Ariana Hajibashi, who’s handling publicity for the event.

Among the projects past funds have benefited include therapeutic equipment, Christmas toys and construction of a courtyard at Our Children’s House, a facility for children with special healthcare needs at Baylor Scott & White in Carrollton.

Sunday’s event runs from 8 pm until midnight-ish, with stacks upon stacks of participating bartenders coming from all over Texas. There’ll even be a couple from Oklahoma City.

This year’s bartending team captains are Ida Claire’s Bonnie Wilson, Parliament’s Stephen Halpin, Leonard Oliver of Austin’s VOX Table, Juli Naida of HG Sply Co. and Armando Guillen of The Standard Pour.

Each bar team is going all out, as usual: Tito Beveridge will be slinging with the Chubbies team, while Studio Zoom Zoom is gathering short rah-rah videos from classic bars around the world, including New York’s Employees Only and Pegu Club and The Violet Hour in Chicago – each of which will play disco music for an hour at their respective establishments in support.

“I truly believe we’re all in this world to do something better,” Townsend says.

Cocktail community remembers legendary bar man in nationwide “Milk & Honey Hour”

With coupes raised high, members of Dallas’ craft-cocktails community paid tribute last night to Sasha Petraske, the influential bar man who pioneered or popularized many of the elements linked with the culture today.

Petraske, who launched Milk & Honey in a quiet residential area of New York’s Lower East Side in 1999, died August 21 of unknown causes. A sartorially polished sort whose exactitude and attention to proper form inspired the way many craft cocktail establishments comport themselves today, he was also instrumental in the development of San Antonio’s cocktail scene and a beloved mentor to many in the industry nationwide.

Bartenders across the country were invited to salute the 42-year-old legend on Monday evening at 9 p.m., the hour at which Milk & Honey would open its speakeasy-style doors. In Dallas, that went down at Midnight Rambler, whose owners, Chad Solomon and Christy Pope, both worked at Milk & Honey more than a decade ago and went on to partner with Petraske in a bar consulting business called Cuffs and Buttons.

Aleeza Gordon of Little Branch, the bar Petraske started in Greenwich Village, led the Midnight Rambler toast for the 30 or so people in attendance.

“He cared about the way that he looked,” Gordon said from her perch atop the bar. “No matter how crazy and interesting the night got, he seemed to be a gentle man. He cared about the way things were done; I think that’s why all of you came to honor him, because you feel the impact of his caring.”

She recalled Petraske’s frequent visits to Little Branch, as well as her occasionally nervous execution of the “ridiculously simple” drinks he would order, such was his presence. “He wanted things to be done right,” she said. “But he did it in a way that made you feel good.”

And with that, a covey of daiquiris – Petraske’s favorite cocktail – rose skyward. Glasses clinked and a group bid farewell to the friend, a mentor and colleague who’d helped shape the world they now inhabited.

Dallas’ craft-cocktail community rallies around ailing elder statesman; you can help, too

They call Charlie Papaceno the godfather of Dallas’ craft-cocktail scene. Ten years ago, he and then-wife Louise Owens opened the no-frills Windmill Lounge in Oak Lawn, unassumingly planting the local flag of an ongoing national renaissance on a nondescript stretch of Maple Avenue.

With the easygoing maestro at the helm, the low-key bar became a practice ground and hangout spot for the scene’s growing field of practitioners – pioneers like Jason Kosmas, Michael Martensen, Eddie “Lucky” Campbell and Sean Conner. Its homey vibe and quality drinks earned the friendly dive a place in Esquire’s top U.S. bars of 2013.

“That was the place you’d go to see all your friends,” says Bonnie Wilson, director of independent bar programs for Addison-based FrontBurner Restaurants. “He nurtured a lot of us, and he was always willing to listen and guide us. We all learned from him.”

Now, the cocktail-community cache that Papaceno has earned is coming full circle. This time, it’s the godfather who is struggling: Late last year, Papaceno left the Windmill to launch his own bar, wanting to work on a new project. And then he found out he had Stage 4 cancer.

The #RallyForCharlie hashtag says it all: Charlie Pap has earned his support. The opportunities to help gets underway Thursday with cocktail specials at places like LARK on the Park and Black Swan Saloon to benefit the cause. But the major fundraising event happens Monday, when an “industry rally” is set for Industry Alley, Papaceno’s soon-to-open bar in the Cedars neighborhood.

“It’s awfully nice,” he says, sitting in the Lamar Avenue nightspot that’s still taking shape, with the lingering smell of fresh paint garnishing the air. “It’s humbling.”

Monday’s cash-only event runs from 2 to 8. Twenty bucks gets you two drink tickets and pork tacos from a whole hog presented onsite. (Additional tickets can be purchased for $5 apiece.) Bartender-led teams of four will be pitted against each other in a giant game of Twister for the cause, and a silent auction will feature multicourse group dinners at places like FT33, Bolsa and Proof + Pantry.

For weeks, the ache in his ear and jaw wouldn’t go away. The first hospital visit revealed nothing. But when the pain got so bad he couldn’t sleep, he went back again; this time the tests showed he had, essentially, cancer of the tongue.

He’s been through radiation and chemo; he’s lost 30 pounds and is moving more slowly, but it hasn’t kept him from pursuing his goal. “I’m just working and trying to get better,” he says.

As a military veteran, the VA is covering his medical costs, but living expenses are another matter, especially if he’s left unable to work for a time.

Monday’s Industry Rally will showcase the bar he’s toiled to make real.  It’s kind of two venues in one – an informal lounge as you enter, with a jukebox, sexy wall art and a bar with a heavy-duty zinc top and see-through panels underneath. In the rear is a cavernous, corrugated-metal-walled game room that will eventually feature pinball and pool tables. “It’s gonna be a split-personality kind of bar,” he says.

He’d originally wanted something much more intimate. “Then I saw this Quonset-hut backroom, and the office upstairs that’s like something out of some British gangster movie,” and he was sold.

A metal-gated courtyard alley winds toward the front door; hence the name. The “industry” part refers to the neighborhood’s history as an industrial area.

Nothing fancy here – no syrups, no tinctures, no shrubs. Except for Miller Lite ponies, all beers will come in a can. The cocktails will be classically simple. “There’s no reason you shouldn’t walk into a regular bar and be able to get a decent Manhattan or Old Fashioned,” Papaceno says. “It doesn’t have to be The Mansion but I don’t want to be a McDonald’s either. Something in the middle.”

So yeah, there won’t be any elaborate garnishes or a kitchen full of produce, but if he has his way, you’ll know you can walk in and get a quality drink in a comfortable atmosphere. It’s the kind of place he hopes people will go before or after the place they’re headed to that evening. Kind of like the Windmill – though he’s not looking to reinvent the place.

Industry Alley, he says, “is not a destination bar. It’s a hangout bar. Hopefully I can design a place that people can hang out in and feel comfortable.”

For Papaceno, that should be no struggle whatsoever.

It was the best of times, it was the thirst of times, and 2014’s constantly unfolding craft-cocktail kaleidoscope unfurled a spirited array of events for DFW’s imbiberati. Here’s a look back at the year’s top stories:

From darkness, light: For a brief but glorious time, the chaos set in motion by Eddie “Lucky” Campbell’s displacement from the late Chesterfield and Michael Martensen’s abrupt exit, along with his bar team, from Bar Smyth and The Cedars Social actually set the stage for two of the city’s most talented and influential bar men to pair up behind the bar at Abacus. The two have a longstanding rivalry – “I’m Seabiscuit and he’s War Admiral,” Campbell once told me. “I’m hard working, and he’s a fucking genetic miracle” – that continued to unfold at Abacus to customers’ benefit, especially late, once the kitchen had closed. One evening we rolled in and the two went back and forth like b-boys, throwing down cocktail creations to put each other’s to shame until Martensen slipped off to a corner to focus on a bit of handiwork. “What’s he doing over there?” Campbell wondered with his sly smile. Martensen emerged with what you see at top: A frothy apple boilermaker made with Deep Ellum Blonde, Cointreau, apple brandy, whole egg and a hollowed-out half-eggshell cupping a whiskey shot. Boss.

MAY: Mate Hartai says goodbye to The Libertine Bar

For years, Hartai — chief barman at Remedy, opening tonight –was synonymous with the Libertine, which he helped transform from solid neighborhood bar to a den of craft-cocktail prowess and innovation. But after five years at the Libertine, Hartai decided it was finally time to move on to other things – namely The Cold Standard, the craft ice business he’s been shaping for some time – and most recently, Remedy, the new Lower Greenville project from HG Sply owner Elias Pope.

JULY: Texas Tiki Throwdown at Tales of the Cocktail, New Orleans

The DFW presence at the spirit industry’s biggest annual gathering has gotten larger and larger, with dozens of bartenders and spirit reps on hand for 2014’s event. Among the festival’s kickoff happenings was the Texas Tiki Throwdown, where DFW drink-slingers went mano-a-mano with others from Houston, Austin and San Antonio. It’s fair to say everyone left the conference room with Lone Stars in their eyes.

JULY: Driftwood introduces an oyster shooter flight

They say the world is your oyster, but sometimes oysters are your world: This little bit of brilliance from Oak Cliff’s disappointingly defunct seafood establishment briefly brightened up my existence. Four oysters on the half-shell, each shell filled upon consumption with one of four spirits or liqueurs: Manzanilla sherry, mezcal, single malt whiskey and Pernod. Let bivalves be bivalves!

AUGUST: Hendricks Gin’s Kanaracuni unveiling

Dallas was one of a handful of cities this summer in which Hendricks Gin chosed to unveil its rare Kanaracuni gin, a single-batch production made from a plant culled from the Venezuelan rainforest. Hendricks knows how to put on an event, and the fancifully exotic tasting, conducted at the Dallas Zoo, did not disappoint: Bordering on elaborate fantasy, it featured tales of adventure and large insects and finally samples of the amazing kumquat-flavored gin, which in intentionally ephemeral fashion shall never be seen again.

AUGUST: Parliament and Proof + Pantry open

As noted above, Lucky Campbell and Michael Martensen’s longstanding rivalry can occasionally reach ridiculous proportions, so it was only logical that their two long-awaited projects would open on the same night — Parliament in Uptown, and Proof + Pantry in the Arts District. (“How ridiculous is that?” Campbell told me a couple of nights before the big event.) Both have met expectations, garnering local and national acclaim.

OCTOBER: Midnight Rambler opens

Behind their Cuffs and Buttons consulting enterprise, cocktail masters Chad Solomon and Christy Pope have long been influences in DFW’s drinking scene, but it wasn’t until this fall that Midnight Rambler, the bar the two have long dreamed of opening, launched at the Joule Hotel. The swanky subterranean palace and its lineup of well-conceived libations take the city to another level, marking another step in its craft-cocktail evolution.

NOVEMBER: Charlie Papaceno leaves the Windmill Lounge

After nine years at the landmark lounge he co-founded with Louise Owens, Papaceno left the venerable dive spot to pursue plans to open a new bar in Dallas’ Cedars neighborhood. One of the scene’s elder statesmen, Papaceno’s bespectacled mug was a steady presence behind the bar at Windmill, which became an early haven for Dallas’ budding craft-bartender scene and went on to garner national attention – including a nod as one of Esquire’s best American bars.

DECEMBER: Trigger’s Toys annual benefit event featuring five pop-up bars

I was crushed to miss this epic event, which made use of the long-unused warren of space at recently opened Henry’s Majestic in the Knox-Henderson area. Five pop-up bars featuring teams of bartenders from DFW and beyond went all out to raise money for a Dallas charity serving hospitalized kids. From sports bar and tiki bar to country saloon and nightclub, it was a raucous party that garnered $100,000 for the cause.

ONGOING: Collectif 1806’s bartender book club events

The bartender education and support arm of Remy Cointreau USA, helmed locally by Emily Perkins, has helped remind that the whole craft-cocktail thing is less revolution than revival. At its periodic exclusive book club gatherings, bartenders page through some of Cointreau’s extensive collection of vintage cocktail tomes, perusing recipes and gleaning old knowledge and then passing the reaped benefits along to consumers. Everybody wins.

As Ryan Fussell of Fort Worth’s Bird Café put it, it was a veritable who’s-who of craft bartenders, dozens of them assembled on a weekday afternoon for the first of several steps toward a purpose greater than themselves. The site was Uptown’s Standard Pour, where five boards had been posted above the bar, each topped with the name of a trusty tipple maker.

Yes, there’s a story there, but here’s what you really need to know: That on Sunday, Dec. 14, five teams of drink-slingers will face off at Henry’s Majestic as part of the Trigger’s Toys Fantasy Draft Main Event – not only for your imbibing pleasure but for the benefit of Trigger’s Toys, a Dallas charity serving hospitalized kids and their families.

As if that’s not enough reason to get yourself over there, consider this: The agency’s third annual fundraiser will feature five pop-up bars of varying tongue-in-cheek themes, and if you’re wondering how Henry’s – the recently opened Knox-Henderson gastropub in the space once occupied by Acme F&B – is going to pull that off, you’re going to have come see for yourself the little ace that bar manager Alex Fletcher has been hiding up his sleeve.

So on this afternoon, the gathered bartenders were at The Standard Pour for the “fantasy draft” that would produce the five teams of 13, along with bar concepts and sponsored spirit lineups. Organizer David Alan, the Austin-based Tipsy Texan himself, was here with his team, the lot of them dressed like referees. Actually, it wasn’t so much a draft as a draw, with each captain – Parliament’s Lucky Campbell, Bolsa’s Kyle Hilla, Knife’s Charlie Moore, LARK at the Park’s Matt Orth and, from Austin, Drink.Well’s Jessica Sanders – picking names out of a bowl to compile their teams.  While most of the crews represent the Dallas-Fort Worth area, a number are coming in from elsewhere to aid the cause from places like Austin, San Antonio, San Diego and Los Angeles.

Dang, my team looks good,” Moore crowed after drawing Fletcher’s name from the batch, adding to a lineup that already included Bolsa’s Spencer Shelton, Proof + Pantry’s Josh Hendrix and Michael Reith of the Windmill Lounge. “That’s it! It’s over. The event runs from 8 pm to midnight at Henry’s Majestic, 4900 McKinney in Dallas. Pre-purchased tickets on Eventbrite (available here) are $20, which includes two drinks. You can also buy tickets at the door for $10, then spring for your drinks inside.

Along with donations from sponsoring spirit producers, last year’s bash at The Standard Pour pulled in a whopping $45,000 for Trigger’s Toys, which in addition to financial aid provides kids with toys and therapy aids. With the help of the bartenders giving their time on Sunday, founder Bryan Townsend – who named the agency for his dog after seeing the animal’s positive effect on a child in need of therapy – hopes to take that to new levels.

“Not only are you changing this industry,” an emotional Townsend told the group. “What we’re doing today will change lives.”

 

Amid the mayhem, camaraderie: Texas weathers the Tales of the Cocktail storm

NEW ORLEANS — Here in the city that sets the standard for revelry, you never know what you might see: A Santa Claus in shorts, random people on stilts, or perhaps a llama. Add to that the loosely organized mayhem that is Tales of the Cocktail, the spirits industry’s largest national gathering, and you‘ve got “Rum Institute” class sessions, tasting stations disguised as giant Cointreau bottles and sponsored parties teeming with booze and spectacle.

Exhibit A: Absolut Vodka’s Wednesday-night welcome bash at Mardi Gras World, a circus-themed soiree featuring drink-slinging midway characters, Andy Warhol lookalikes in various sizes and craft-cocktail founding father Dale DeGroff crooning jazzy standards in the garden of gigantic floats. Or: the acrobat-dotted William Grant & Sons-sponsored party at Lakefront Airport, a restored art-deco edifice where I’m 85 percent sure I saw a camel.

This was the 12th annual TOTC gathering; nearly 23,000 people attended last year. The whole experience can be a bit much, a day-to-day beatdown so grueling that it’s tempting to keep score. “Goodnight NOLA, you’re a worthy adversary,” went Dallas’ Trina Nishimura’s fifth-night post on Facebook. “This round however, goes to me.” (Her final score: NOLA 2, Trina 2, draw 1.) But the frenzy couldn’t obscure the little things that make the annual festival special: The random run-ins with friends not seen since last year, the face-to-face encounters with people known only through social media, the new friends made over spirited dinners and Thursday’s massive midnight toast outside the Old Absinthe House by members of the U.S. Bartenders Guild. The days were sprinkled with seminars on topics like bitters, a history of women working behind the bar or the Chinese spirit baijiu, but it was also worth taking a breather to browse the event’s bitters-and-book store or the Cocktail Kingdom-run shop with its gold-plated jiggers and beautifully reproduced vintage tomes like “Harry Johnson’s Bartender’s Manual – Or: How To Mix Drinks of the Present Style” (1900 edition).

The Lone Star State was well represented. It was Texas, of course, that kicked off the jauntiness with Wednesday morning’s Tiki Throwdown at host Hotel Monteleone. The next day, Bonnie Wilson, beverage program manager forFrontburner’s Fork It Over Restaurants – think Plano’s Whiskey Cake or The Ranch at Las Colinas – crafted mini cocktails for the sampling hordes at one of numerous drink stations in Anchor Distilling’s tasting room. Later that afternoon, Austin’s Chris Bostick represented not just Texas but an entire gender at a Battle of the Sexes event sponsored by Mandarine Napoleon. And that night, Dallas’ Brad Bowden (Barter) and Christian Armando (The Standard Pour) were among the many visiting bartenders getting behind the stick at festival-related parties popping up at French Quarter-area locations.

Austin-via-Dallas resident Jason Kosmas, the easygoing co-founder of legendary New York bar Employees Only and one of the driving forces behind Dallas’ now thriving craft-cocktail scene, took some time to talk up The 86 Co., the fledgling spirits line he started with fellow EO barman Dushan Zaric and liquor ambassador Simon Ford. He held afternoon court at New Orleans’ Gravier Street Social, describing his products like a proud daddy recounting his 3-year-old’s budding sports prowess. “If it wasn’t for Tales, I don’t think we would have had the resources and relationships to take it to the next level,” he said.

Friday night would bring yet another party, this one sponsored by The 86 Co. – the annual bar battle pitting half a dozen bars from around the country against each other in a raucous atmosphere to see who could best handle the pressure, evoke their home environment and make the best set of cocktails. In short: To see who was mas macho. As with last year’s event — at which Dallas’ late Bar Smyth made an admirable showing — the throwdown was promoted boxing-style, this time with fancy posters and clever profile cards proclaiming each bar’s staff, fighting styles and words of warning to the competition. In addition to the Tiki Throwdown team, the night’s powerful Texas showing included at least a half-dozen Dallas-based state beverage reps; bartenders Alex Fletcher of Victor Tango’s, Sissy’s Southern Kitchen’s Chase Streitz, Barter’s Stephen Halpin and Brad Bowden, Libertine’s Will Croxville and Driftwood’s Ryan Sumner; even cocktail gadabout Sean Reardon.

Upstairs, Houston bartending luminary Bobby Heugel poured mezcal. Vegas-based “Modern Mixologist” and author Tony Abou-Ganim singlehandedly lit up an entire corner of the dark room with his big-time smile. There was New York’s Julie Reiner, co-founder of the Flatiron Lounge, Pegu Club and Clover Club – but wait, who was that once again behind the bar at The 86 Co.’s  station? None other than Dallas’ own Omar YeeFoon, the former Bar Smyth/Cedars Social cocktail magician who joined The 86 Co. as Texas state brand ambassador earlier this year.

My favorite sips of the evening, aside from the chicory-syrup-enhanced Milk Punch Hurricane poured at Boston’s Backbar, leaned toward the trending mezcal, including Vegas-based Herbs and Rye’s brilliant Smoking Mirrors – a spicy, sweet and smoky mix mining Fernet and pineapple syrup – and Denver stalwart Williams & Graham’s voluptuous Gold Digger, which matched the smoky agave spirit with Pierre Ferrand dry curacao and two kinds of sherry.

San Francisco’s Trick Dog would take the judges’ top prize, boosted by its carnival theme and cocktail-filled watermelons suspended in mini hammocks for midair imbibing through tiny spouts. Williams & Graham’s team – whose lead man, Sean Kenyon, would earn Tales’ nod as American Bartender of the Year, worked hard to recreate the bar’s library-esque atmosphere. A guy from New York’s NoMad climbed atop the bar and rained shots of premium mezcal into willing mouths, while Backbar was fronted in part by a fierce and impressively bearded madman with habanero eyes. Los Angeles’ Harvard & Stone was back there in a corner somewhere, out-crazied by the adjacent team from Herbs and Rye with its gaudy chandeliers and a leopard-bikini’ed woman the size of a Galliano bottle primping atop the bar, which in turn inspired Seattle bar man Rocky Yeh to peel off his shirt, leap aboard and let out his best beastly roar.

Could that have been what ultimately earned Herbs and Rye the People’s Choice award? Who knows, but it was that kind of night. It was that kind of week. And for a community whose living revolves around giving guests a great experience, a time to soak in camaraderie and a great experience for themselves.

“I’m Dallas bound,” wrote TOTC first-timer Lauren Spore, a cocktail waitress at Southlake’s Brio Tuscan Grille, in a Facebook post when it was all over. “But thank you to everyone I met, the new friends I made and the old friends who helped make this even more amazing. This has been one of the most incredible experiences I’ve ever had in my life and to all the people who made it happen, thank you.”

Holiday spirits: The buzz from Cocktails For A Cause 2013

Whatever you were up to Sunday night, it was likely nowhere near as fun as the scene that blazed at The Standard Pour in Uptown, where Santa came early in the form of 50-plus bartenders who rained cocktails upon their imbibing elf minions. Beneath the rapids of glittering tinsel, a DJ dropped beats for the wall-to-wall crowd there to support Cocktails For A Cause, the second annual event benefiting Trigger’s Toys, a Dallas charity serving hospitalized children.

In the wake of The Great Unpleasantness that in recent weeks has thrown two of Dallas’ nationally recognized establishments into uncertainty, this was a much-needed breath of fresh air: The mood was frothier than a Ramos Gin Fizz, and aside from holiday cheer it came from, more than anything, the palpable sense of community that often goes unnoticed beyond the confines of DFW’s mixology circles. Bartenders who’d missed out on last year’s event had clamored to volunteer at this year’s, and the end result was a Holly-Jolly-palooza of craft-cocktail talent. These were the men and women who, as Abacus’ Eddie “Lucky” Campbell would later put it, have changed the way that DFW drinks – among them Campbell himself in his signature fedora; Windmill Lounge’s Charlie Papaceno in a gold smoking jacket; Jason Kosmas of The 86 Co.; and several Santa-fied shakers including Barter’s Rocco Milano and Michael Martensen, formerly of Smyth and The Cedars Social.

Combined with what sponsoring spirit makers had contributed, a whopping $45,000 was raised for the cause. “It’s still overwhelming to me,” said Standard Pour’s Brian McCullough, who co-coordinated the event along with Whiskey Cake’s Sean Conner and Trigger’s Toys founder Bryan Townsend.

Actually, make that causes, plural: During the event, bartender Milano was informed that some of the proceeds would help defray expenses he and his girlfriend have accumulated in care of their months-old baby boy, who has been dealing with medical complications.

“Am I surprised? Yes,” Milano said. “Am I shocked? No. The greatest strength I always felt Dallas’ cocktail community has is a sense of family and unity.”

He was touched to receive such support, he said, despite his absence from the scene in recent months: Even as he made preparations to run the bar program at the just-opened Barter, he and his girlfriend were spending weeks upon weeks living in Ronald McDonald Houses in Fort Worth and Houston, where their son was receiving medical care.

“It’s a tremendous blessing, to be sure,” he said.

Hugs abounded, and then so did drinks and camaraderie; afterward, even as the post-club buzz fluffed up your senses and echoed in your ears, it was clear that something special had gone down.

“Last night might have been one of the best nights of my life,” wrote Townsend of Trigger’s Toys on his Facebook page. “… The overpowering support was just so profound I don’t know if it could ever be measured or explained unless you were there to see it for yourself…. We as a group and as a community did something bigger than ourselves, and it feels amazing.”
