Negroni Week is underway, and as summer creeps ever closer it’s time to make this legendary ruby-red cocktail your wingman for the next few months. Bittersweet and refreshing, it’s one of my personal favorites, and while any decent bar with a bottle of Campari can generally cobble one together, this week is extra special: It’s all for a good cause.
As drinks go, this is Kirk, Spock and McCoy (or hey, if you like, Harry, Ron and Hermione). The complementary trio of equal parts gin, sweet vermouth and lush, bitter Campari dates back to early 20th-century Italy and has inspired a host of variations; you can enjoy the original and its spawn through Sunday at bars across Dallas-Fort Worth and feel extra good about the fact that your hard-earned dollars are going to charity.
Now in its fifth year, Negroni Week, presented by Imbibe magazine and Campari, has a hashtag and a flashy web site with a super-cool feature: You can specify your global location, set your acceptable travel range (yes! Drive 150 miles for a Negroni if you wish!) and be given a list of participating bars. There are 95 such venues within a 15-mile radius of Dallas, for instance, so there’s really no excuse not to drink and donate.
Between 2013 and 2016, the effort has grown from 100 participating venues to about 6,000 worldwide, raising nearly $900,000 in the process for charities such as Mercy Corps, Water for People, United Cerebral Palsy and the New Orleans Musicians’ Clinic. In Texas, the recipient is Trigger’s Toys, which serves long-term hospitalized kids and their families.
Among the participating venues – you can find a full list here – in Dallas are the Time Out Tavern, Americano, Lounge Here, The Mirador, Sprezza, Oddfellows and The Cedars Social. In Fort Worth, you’ve got Rodeo Goat, Proper and Cork and Pig Tavern. Among others. Even Ruth’s Chris Steak House is getting into the action.
For any serious Dallas cocktail fan, the crew behind the bar Sunday would have looked familiar – Austin Millspaugh, Jorge Herrera and Christian Rodriguez, the popular Thursday night crew from The Standard Pour in Uptown – jostling shakers, swirling liquids, torching lemon peels and working the room in their dapper TSP uniforms. It was a practiced environment for the TSP crew, but a typical Uptown crowd this was not. A glimpse outside made it clear: They weren’t in Dallas anymore.
Chinatown was a half-mile away; the Transamerica Pyramid a few blocks beyond that. Five miles to the west, the Golden Gate Bridge. On Sunday, the Standard Pour team – which in recent months has made a habit of doing guest pop-ups at other bars – took things to a whole new level, bringing their traveling “TSP Takeover” to Pacific Cocktail Haven, or PCH, one of San Francisco’s newer cocktail joints.
“We’re going into a West Coast stronghold,” Millspaugh had said before the trip, aware that the city, along with New York, had forged the beginnings of today’s craft-cocktail revival. “We have to bring our A-game.”
And that they did, with a six-drink lineup sponsored by Pernod Ricard USA. As with their previous pop-ups at Dallas’ Industry Alley and High & Tight, it was all for charity – with Planned Parenthood the recipient of this night’s proceeds.
Though PCH has hosted guest bartenders before, “we’ve never had a team take over the bar,” said Kevin Diedrich, PCH’s operating partner. The bar, typically closed on Sundays, had opened for this special event. “It’s a cool way to share what we do, but also for them to share with they do. We went through the drink list this afternoon. There’s some cool flavors. They’re pushing the boundaries.”
There was Rodriguez’ tropical Bad and Boujee, a mix of tequila, horchata, lime, cinnamon-vanilla syrup, Topo Chico and tiki bitters.
Herrera’s Tourist Trap was a crowd favorite featuring Irish whiskey, Yellow Chartreuse, bittersweet liqueur, sweet vermouth and a tobacco tincture.
Millspaugh, meanwhile, in typical Millspaughian fashion, had concocted the cocktail equivalent of caramel-truffle popcorn with his disorientingly delicious Light, Camera, Action – an ensemble of Irish whiskey, nutty Oloroso sherry, popcorn liquid, dehyrdrated foie gras and black truffle salt.
“It’s weird,” said one woman, a Stanford University instructor. “I feel like I’m drinking a movie.”
The TSP team showcased Texas hospitality and flair, with Millspaugh at one point grating dehydrated foie gras directly into a woman’s mouth. He, Herrera and Rodriguez have drawn a loyal following on Thursdays at The Standard Pour, which has made a habit of trying not to be a standard bar.
Last year, the McKinney Avenue venue featured a weekly series of guest crews from other Dallas bars; a weekly event felt like too much, so as 2017 rolled around they brainstormed. What if the TSP team spent one night a month working at other bars, they thought? “We’re just trying to get our names out there,” Rodriguez says.
Their first “takeover” took place at Knox-Henderson’s Atwater Alley, after which Herrera proposed the idea of doing it all for a good cause. April’s event at Industry Alley, sponsored by Remy Cointreau, benefited Texas Scottish Rite Hospital for Children, while proceeds from their March pop-up at Deep Ellum’s High & Tight, sponsored by Avion tequila and St. Germain, went to the Dallas office of the National Multiple Sclerosis Society. Each event raised $1,300 or more for charity.
They recently met Jessamine McClellan, the San Francisco-based national brand ambassador for Redbreast Irish whiskey, and told her about the project, pitching the idea of taking their show on the road. She suggested the idea to Diedrich, who agreed to host the TSP crew. The Standard Pour offered to partially subsidize their trip, and the deal was done.
“The idea is, one, to showcase the place we work at, and two, to give back,” Millspaugh said. “It’s, like, paying it forward.”
When it comes to benefit events involving cocktails, there’s always room for one more. This weekend, Dallas’ Industry Alley is pulling off what perhaps no other local cocktail bar has done by throwing two benefit events on consecutive nights.
On Sunday, a team of bartenders from Uptown’s Standard Pour will be slinging drinks at the Cedars District bar, all for a good cause: All of the night’s tips will benefit Scottish Rite Hospital for Children.
“The Standard Pour Takeover” runs from 8 p.m. to 2 a.m. Sunday at Industry Alley, just one night after the bar hosts a pair of pop-up dinners from two teams of Dallas chefs, also to benefit Scottish Rite.
Standard Pour bartenders Austin Millspaugh, Christian Rodriguez and Jorge Herrera started the takeover events as a way of both promoting their bar and giving back, and they hope to make it a monthly thing. Last month’s inaugural benefit takeover, at Deep Ellum’s High and Tight and sponsored by Avion tequila and St. Germain elderflower liqueur, benefited the Dallas office of the National Multiple Sclerosis Society.
“It’s, like, paying it forward,” Millspaugh said. “And people get to experience different venues.”
Sunday’s event will be sponsored by Remy Cointreau, so look for cocktails featuring Mount Gay Rum, Botanist Gin and, of course, Cointreau.
It all started with hair – Noelle Hendrix’s hair in particular. The Dallas private chef has the kind of eye-catching dreadlocks that invite teasing from fellow chefs, who would joke about taking their knives to it – maybe for charity.
Teasing turned to brainstorming and then into action, and on Saturday you’ll be able to reap the results when Industry Alley, in the Cedars, hosts a pop-up dinner showcasing a semi-supergroup of Dallas chefs. Proceeds will fund Hendrix’s “$10K for Kids” effort to benefit St. Jude Children’s Research Hospital.
The cash-only event, which goes from 6 p.m. until the grub runs out, will feature four of Dallas’ top chefs, each offering a specialty dish for just $10. Doors open at 4. Early arrival is advised.
Participating chefs include John Tesar of Knife, Oak and adjoining Quill, Graham Dodds of Wayward Sons, LUCK’s Daniel Pittman and Kitchen LTO’s Nick Amoriello. So while it’s all for a good cause, this is clearly a chance to benefit your belly as well. Behold the choices: Beef cheek on creamy polenta (Tesar); lamb, pork or beef brisket tacos (Pittman); venison tartare (Amoriello); or strawberry shortcake (Dodds).
Bar owner Charlie Papaceno will be offering a pair of cocktails created especially for the event, each of them a nod to Danny Thomas, the actor, singer and comedian who founded St. Jude in 1962 to treat and research catastrophic childhood disease. Make Room for Daddy – the name of the sitcom Thomas starred in from 1953-65 – is an old-fashioned mix of Old Forester bourbon and Lebanese 7-spice syrup, while That Girl – the name of the series starring Thomas’ daughter, Marlo – features tequila, triple sec, cranberry and Champagne.
There’ll also be live music, plus a handful of raffles and silent auction items – including Hendrix’s signature dreadlocks, which can be had for $1,000. “The money goes to the kids, and the scissors go in the winner’s hands,” she says. “Otherwise, they’ll stick around and be ready to cut next year.”
This is the latest in a series of pop-up dinners at Industry Alley, which has also featured chefs such as Small Brewpub’s Misti Norris and Lucia’s Justin Holt. But it’s the first to fund a cause, or to have anything to do with hair.
It’s been way too long since the vivacious Amber West has loosed her earthy mixology mettle upon the world, but that’s all going to change on Saturday with Off To The FARM, an epicurean event benefitting Project Transformation, an education-oriented agency serving low-income kids throughout North Texas.
There will be goats. And aquaponics. And hors d’oeuvres from chefs like Hibiscus’ Graham Dodds, Garden Café’s Mark Wootten and Adam West of The Porch. And of course, drinks from Amber West, whose talents once shone behind the bar at Central 214 (where Dodds was chef) before she took a job as Texas rep for Vermont-based Caledonia Spirits.
Off to the FARM runs from 2 to 6 pm Saturday at 314 W. Belt Line in Desoto, just outside of Oak Cliff. The farm facility houses both FARM (Farmers Assisting Returning Military) and Eat The Yard.
Project Transformation, a non-profit education organization offering after-school and summer programs to low-income youth, is putting on the event in partnership with FARM. Participating chefs will create their hors d’oeuvres using the farm’s locally grown produce, and it’s a fair bet that Amber’s cocktails will include some of that fresh stuff, too: As bar manager at Central 214, she had a particular knack – and an undeniable passion – for highlighting seasonal fruits of the land in her cocktails. But then Caledonia stole her away, and then she became even busier still, taking time off to have her second daughter, Sage.
“I’ve supported Project Transformation for the last three years,” she says. “Being a mom, my heart just went out to these kids who don’t have anywhere to go after school. This really saves them from being on the streets.”
And with part of Project Transformation’s curriculum including cooking and gardening workshops, she was sold.
West’s cocktails will celebrate springtime and complement the event’s Southern-style menu. And of course, they’ll feature Caledonia’s honey-kissed Barr Hill Gin. And probably herbs and honeysuckle too.
All proceeds will benefit Project Transformation. Tickets for the all-inclusive event are $35 in advance or $40 at the door and can be purchased here. More information is available here.
As Ryan Fussell of Fort Worth’s Bird Café put it, it was a veritable who’s-who of craft bartenders, dozens of them assembled on a weekday afternoon for the first of several steps toward a purpose greater than themselves. The site was Uptown’s Standard Pour, where five boards had been posted above the bar, each topped with the name of a trusty tipple maker.
Yes, there’s a story there, but here’s what you really need to know: That on Sunday, Dec. 14, five teams of drink-slingers will face off at Henry’s Majestic as part of the Trigger’s Toys Fantasy Draft Main Event – not only for your imbibing pleasure but for the benefit of Trigger’s Toys, a Dallas charity serving hospitalized kids and their families.
As if that’s not enough reason to get yourself over there, consider this: The agency’s third annual fundraiser will feature five pop-up bars of varying tongue-in-cheek themes, and if you’re wondering how Henry’s – the recently opened Knox-Henderson gastropub in the space once occupied by Acme F&B – is going to pull that off, you’re going to have come see for yourself the little ace that bar manager Alex Fletcher has been hiding up his sleeve.
So on this afternoon, the gathered bartenders were at The Standard Pour for the “fantasy draft” that would produce the five teams of 13, along with bar concepts and sponsored spirit lineups. Organizer David Alan, the Austin-based Tipsy Texan himself, was here with his team, the lot of them dressed like referees. Actually, it wasn’t so much a draft as a draw, with each captain – Parliament’s Lucky Campbell, Bolsa’s Kyle Hilla, Knife’s Charlie Moore, LARK at the Park’s Matt Orth and, from Austin, Drink.Well’s Jessica Sanders – picking names out of a bowl to compile their teams. While most of the crews represent the Dallas-Fort Worth area, a number are coming in from elsewhere to aid the cause from places like Austin, San Antonio, San Diego and Los Angeles.
“Dang, my team looks good,” Moore crowed after drawing Fletcher’s name from the batch, adding to a lineup that already included Bolsa’s Spencer Shelton, Proof + Pantry’s Josh Hendrix and Michael Reith of the Windmill Lounge. “That’s it! It’s over. Everybody go home.”“Stacks on stacks,” Hendrix added.Your pop-up bar lineup will include a sports bar, honky-tonk saloon, nightclub, tiki bar and, of course, bespoke cocktail lounge. The event runs from 8 pm to midnight at Henry’s Majestic, 4900 McKinney in Dallas. Pre-purchased tickets on Eventbrite (available here) are $20, which includes two drinks. You can also buy tickets at the door for $10, then spring for your drinks inside.
Along with donations from sponsoring spirit producers, last year’s bash at The Standard Pour pulled in a whopping $45,000 for Trigger’s Toys, which in addition to financial aid provides kids with toys and therapy aids. With the help of the bartenders giving their time on Sunday, founder Bryan Townsend – who named the agency for his dog after seeing the animal’s positive effect on a child in need of therapy – hopes to take that to new levels.
“Not only are you changing this industry,” an emotional Townsend told the group. “What we’re doing today will change lives.”
So. You’ve been looking to unleash your inner Bonnie or Clyde. Minus the bank robberies, and especially minus the fatal ambush. Really, it’s about the threads. And the giggle juice.
Well, now’s your chance, pal: History With a Twist is returning to Dallas Heritage Village on April 26. Be a wisehead and get over there.
The second annual event celebrates classic American cocktails and the style of the Prohibition Era. Vintage early 20th-century fashion is encouraged, so break out your jazz suits, your cloche hats and your fedoras, and take a stroll down the village’s throwback Main Street while tipping a few fancydranks from big-cheese bartenders Michael Martensen and Brian McCullough.
Hors d’oeuvres will be on hand, as will tunes from the Singapore Slingers, a small orchestra specializing in pre-swing American dance music. I’ve never heard them, but they sound swell. Also expect a silent auction, photo booth and vintage car show.
Tickets – available here – are $75 or $125 a couple, with proceeds benefiting the village’s historical education activities. The event runs from 7 to 11 p.m. It’s going to be hotsy-totsy.

Whatever you were up to Sunday night, it was likely nowhere near as fun as the scene that blazed at The Standard Pour in Uptown, where Santa came early in the form of 50-plus bartenders who rained cocktails upon their imbibing elf minions. Beneath the rapids of glittering tinsel, a DJ dropped beats for the wall-to-wall crowd there to support Cocktails For A Cause, the second annual event benefiting Trigger’s Toys, a Dallas charity serving hospitalized children.
In the wake of The Great Unpleasantness that in recent weeks has thrown two of Dallas’ nationally recognized establishments into uncertainty, this was a much-needed breath of fresh air: The mood was frothier than a Ramos Gin Fizz, and aside from holiday cheer it came from, more than anything, the palpable sense of community that often goes unnoticed beyond the confines of DFW’s mixology circles. Bartenders who’d missed out on last year’s event had clamored to volunteer at this year’s, and the end result was a Holly-Jolly-palooza of craft-cocktail talent. These were the men and women who, as Abacus’ Eddie “Lucky” Campbell would later put it, have changed the way that DFW drinks – among them Campbell himself in his signature fedora; Windmill Lounge’s Charlie Papaceno in a gold smoking jacket; Jason Kosmas of The 86 Co.; and several Santa-fied shakers including Barter’s Rocco Milano and Michael Martensen, formerly of Smyth and The Cedars Social.
Combined with what sponsoring spirit makers had contributed, a whopping $45,000 was raised for the cause. “It’s still overwhelming to me,” said Standard Pour’s Brian McCullough, who co-coordinated the event along with Whiskey Cake’s Sean Conner and Trigger’s Toys founder Bryan Townsend.
Actually, make that causes, plural: During the event, bartender Milano was informed that some of the proceeds would help defray expenses he and his girlfriend have accumulated in care of their months-old baby boy, who has been dealing with medical complications.
“Am I surprised? Yes,” Milano said. “Am I shocked? No. The greatest strength I always felt Dallas’ cocktail community has is a sense of family and unity.”
He was touched to receive such support, he said, despite his absence from the scene in recent months: Even as he made preparations to run the bar program at the just-opened Barter, he and his girlfriend were spending weeks upon weeks living in Ronald McDonald Houses in Fort Worth and Houston, where their son was receiving medical care.
“It’s a tremendous blessing, to be sure,” he said.
Hugs abounded, and then so did drinks and camaraderie; afterward, even as the post-club buzz fluffed up your senses and echoed in your ears, it was clear that something special had gone down.
“Last night might have been one of the best nights of my life,” wrote Townsend of Trigger’s Toys on his Facebook page. “… The overpowering support was just so profound I don’t know if it could ever be measured or explained unless you were there to see it for yourself…. We as a group and as a community did something bigger than ourselves, and it feels amazing.”
