Saturday’s Ultimate Cocktail Experience will turn Deep Ellum space into a city under a roof

On Saturday, the Bomb Factory in Deep Ellum will transform into a virtual city under a roof. Think bodegas, food trucks, a 13-piece band, a shoeshine stand.

In that sense, the always zany Ultimate Cocktail Experience will be no different – and yet very different in its quest to raise money to benefit for needy kids and their families. Each year, dozens of bartenders from Texas and beyond form teams and try to out-do each other as one-night-only pop-ups, churning out cocktails for charity while creating an identity fitting the theme.

“We really create an experience,” says event founder Bryan Townsend, who first created the event to benefit Trigger’s Toys, the charity he started 10 years ago. “I want it to be the kind of thing where people look at their friends and say, ‘What the hell is going on?’”

What began as a modest holiday-season party at an Uptown bar has eclipsed $200,000 in proceeds each of the last two years. Now in its 10thyear, the event has raised $1.2 million in all, moving from the grassy expanse of Klyde Warren Park into the massive Deep Ellum venue.

“It’s turned into this thing,” Townsend says. “I’ve been really proud of what we’ve been able to accomplish.”

Ten years ago, Townsend was feeling trapped in the corporate job he had then and began to focus on other things – like his dog, Trigger. He and Trigger were at a Grapevine hospital one day when a nurse told him about a little girl in therapy who’d been unable to socialize with others.

Townsend said: Maybe she’d like to give Trigger a treat?

The girl did, and then Townsend wondered if she might want to follow Trigger through one of the play tunnels in the children’s ward. When that happened, the nurse went and got the girl’s mom, because it was so unlike the girl to be so social.

Inspired by the experience, Townsend created Trigger’s Toys, a nonprofit providing toys, therapy aids and financial assistance to hospitalized kids and their families. As the proceeds grew, Townsend spread the benefits around, with funds now also providing therapy services at Bryan’s House, a Dallas agency serving kids with cerebral palsy, autism, Down syndrome and more.

That’s the mission at the heart of Saturday’s revelry, which runs from 7-11 p.m. at the Bomb Factory, or starting at 6 p.m. for VIP ticket holders. Attendees might encounter breakdancers, drum lines, fortune tellers, even a dog park.

“We want to it be like you’re walking through a city,” says Townsend, vice president and sales director for spirits producer The 86 Co. “What would you see?

Four different pop-ups will vie for top honors:

Elevate, a glam hotel-style bar headed by Megan McClinton and Jason Pollard (The Usual, Fort Worth);

The Lab, a molecular mixology bar led by Fernanda Rossano (High & Tight, Deep Ellum) and Austin Millspaugh (Standard Pour, Uptown);

Corner Bar, a neighborhood-bar concept led by Ravinder Singh (Macellaio, Bishop Arts) and Jones Long (Knife, Mockingbird Station); and

Neon, headed by Zach Potts (Gung Ho, Lower Greenville) and Kelsey Ramage (Trash Collective, Toronto).

The idea behind Dallas’ Network Bar is simple. It’s a craft-cocktail bar where you network. The members-only concept from Phil Romano and Stuart Fitts, which targets career-minded professionals, opens Monday at Trinity Groves.

Granted, there are networking happy hours you could attend for free, so why would you shell out $500 to $1,000 to become a member of Network Bar?

1.Because of the networking, of course.

Yes, you could do your networking in a place meant for drinking. But here, you can do your drinking in a place meant for networking. According to its website, Network Bar “takes networking and social interaction to another level.”

Members must be recommended by other members and have their applications approved by a committee; those sought are described as “eager, ever curious, always-on-the-hunt individuals (who) thrive on new ideas and problem solving…. They must have a purpose.” In other words, not  your garden-variety professionals!

Membership is $500 for those 30 and younger. If you’re older than that, it’s $1,000. As of Friday, membership was up to 217, said the bar’s Stayci Runnels.

Not a member? You can still get in as a member’s guest or, like at your gym, tour the place under the watchful eye of a membership team representative.

2. Because there’s an app for that.

Yes, this club comes with its own mobile app. Once inside the club, members can then peer into the app to see who else is checked in – and then reach out to make connections and exchange digital business cards. Networking!

3. Because of the atmosphere and membership benefits.

Check out those handsome leather chairs. Those brawny barstools, that stylish wood paneling and dim lighting. This place is elegant AF.  Cool photographs of wild animals, in soft sepia and stately black and white, gaze at you from the walls, along with a big bison head. Is this not a place you want to freely roam? It’s like you’re in Wayne Manor.

In addition to the expansive old-lodge-y setting, there’s a private meeting room. Otherwise, classy red drapes can be drawn to make public seating clusters more secluded. And the website promises activities such as wine tastings, a lecture/workshop series and fireside chats.

4. Because of the cocktails.

The bar’s drink menu features original cocktails from James Slater, described on Network Bar’s website as “one of the best mixologists in the world.” Lofty praise, indeed, but Slater is indeed no slouch, having previously helmed bars at Knife, Spoon, Oak, Quill and most recently, Idle Rye. (He also created two of my favorite cocktails of 2014.) “This place is different than any place I’ve ever worked,” Slater says; his drink menu will feature 15 cocktails priced from $13-$15, including a frozen rose cocktail and half-dozen barrel-aged ones.

“I’m putting my heart and soul into it,” Slater says.

You may also catch a glimpse of a curious vessel resembling a small silver chalice. What is that, you might (rightfully) wonder? The answer may or may not be the most lavish cocktail in Texas, an off-menu, super-premium concoction featuring a high-end tequila and a dusting of gold flakes.

5. Because of the brain food.

“The Network Bar is committed to nourishing your network as well as your brain,” the website says. That means food and drinks that the club declares will amp up your memory, focus and productivity – think green smoothies, lean proteins and cold-pressed juices. And then think some more.

But really, Network Bar is about rubbing shoulders in a setting designed for that purpose. “You can come in here and talk ideas, make connections, whatever,” says general manager Josh Laudan. “It’s like LinkedIn, but with cocktails. It’s a very unique concept as far as this industry goes.”

Standard Pour bartender wins local cocktail battle, will represent DFW at national competition

For a lot of people, the idea of making a few drinks brings to mind mixing a little vodka with soda over ice, but for the craft bartenders who strutted their stuff before the judges earlier this week, it meant much, much more – firing up an original cocktail and then knocking out a dozen tequila classics, all within minutes. And with flair, to boot.

Jorge Herrera is on his way to New York City because he managed to make the whole thing look easy. A veteran of Plano’s Mexican Sugar who joined The Standard Pour in Uptown earlier this year, Herrera took top prize at Monday’s Espolón Cocktail Fight for the right to represent the DFW area at the tequila brand’s national finals in November.

Held at the DEC on Dragon, the event – part culinary competition, part WWF – was a raucous, “luchador-style” affair pitting Dallas drink slingers against their Fort Worth brethren.

Here, in photos, are some of the highlights.

In the first matchup, Devin “El Guapo” McCullough of The People’s Last Stand, at Mockingbird Station, took on Amber “Waves of Pain” Davidson of Fort Worth’s Bird Cafe. Contestants had two minutes to set up their stations and three minutes to prepare their original cocktails for the judges.

Next up was Jonathan “Manila Killa” Garcia, also of The People’s Last Stand, against Jermey “Big Jerm” Elliott of Citizen, in Uptown. Garcia appeared in a conical hat while Elliott fired up the crowd by stripping down to shorts and a tank top.

With competitors taking the stage with painted faces, or in skimpy or outlandish outfits, supporters embraced the costumed spirit of things and advantaged the nearby photo booth.

The third matchup pitted Cody Barboza, of Deep Ellum’s Armoury D.E., against Jason Pollard of The Usual, in Fort Worth. Both Barboza’s mescal-fueled El Rico and Pollard’s One Hour Break — which leaned savory with Averna and molé bitters — earned second-round status.

In the fourth duel, Brittany “B-Day” Day of Thompson’s, in Fort Worth, faced off against Geovanni “Geo” Alafita of Knife, near Mockingbird Station. Day’s Smoke In The Morning went smoky-sweet with mezcal, maple syrup and Allspice Dram while Alafita’s preciously presented Rosario combined tequila with mildly bitter Aperol, cilantro and jalapeño.

In addition to taste, presentation and how well the tequila shone through, contestants were judged on showmanship. In addition to yours truly, the panel included chef Nick Walker of The Mansion at Turtle Creek, Bonnie Wilson Coetzee of FrontBurner Restaurants and Frederick Wildman brand ambassador Austin Millspaugh.

The fifth and final first-round match was easily the most entertaining as the typically understated Jorge “Don Juan” Herrera of The Standard Pour took the platform with a lovely lady on each arm in his duel against Sean “McDoozy” McDowell of Thompson’s. But Herrera put some shine on his show by completing his deceptively simple drink with plenty of time to spare, then lighting up a cigar and preening before the crowd as McDowell continued to race against the clock.

Herrera’s Carolina cocktail was lush with cigar-infused Grand Marnier, while McDowell’s tart Trade With Mexico bundled both Espolón blanco and reposado with tea and homemade ginger beer. Both advanced to the second round.

In the second round, the top six contestants each had to crank out 10 El Diablos — a lesser known tequila classic featuring reposado tequila, créme de cassis, lime and ginger beer — within a few minutes’ time.

Herrera’s and Davidson’s were dubbed mas macho by the judges and both advanced to the final round, where each had to craft a Margarita using Espolón blanco, a Paloma with Espolón reposado and an Old Fashioned with Espolón añejo — again, within a few minutes.

A taste of each drink, then the judges conferred, taking into account the entire night. It was Herrera’s performance that was judged best overall, which means he’ll be competing at Espolón’s national finals in early November.

Brian McCullough, co-founder of The Standard Pour, said he had no doubt that the Uptown bar’s attention to efficiency on busy weekend nights helped prepare Herrera for the competition’s fast-paced demands.

Between that and Herrera’s previous training at FrontBurner, which owns Mexican Sugar, “he’s been working toward winning this ever since he started working here,” McCullough said.

To watch a normally subdued guy transform into the very picture of confidence made him proud.

“Seeing him do that was like seeing him come out of his shell,” McCullough said.

We all know that the people who make your cocktails can be right up there with your doctor, your shrink, your spiritual leader and your favorite podcast host when it comes to simple week-to-week survival. Sometimes they’re kind of all of those things rolled into one, except that they can also knock out a good drink – which might make them the most important people of all.

So when the best of them move on to new places, you want to know. Here’s a roundup of some of Dallas’ craft-cocktail peeps who’ve found new digs.

Don’t start freakin’ if you haven’t seen Eakin: He’s over at soon-to-open Rapscallion.

If you haven’t seen Eddie Eakin mixing things up at Bishop Arts’ Boulevardier lately, it’s for good reason: The buff barman has been busy readying beverage operations at soon-to-open Rapscallion, the new Lower Greenville venture from the folks behind Boulevardier.

With Eakin at the helm and one wall pretty much entirely devoted to bar space and storage, you know it’s going to be serious.

In Eakin’s absence, former Meddlesome Moth mixmaster Austin Millspaugh has stepped in to fill the void. The man who once incorporated foie gras into a cocktail is now overseeing Boulevardier’s bar program and is already in full tinker mode; if your tastes lean toward bitter, try his smoked Negroni with Fernet, thyme and Green Chartreuse. His ambitious alchemy should be interesting to watch as the year goes on.

Oak, in the Design District, is another place to put on your radar: The high-end restaurant has gotten double-barrel-serious about its cocktail program by bringing on both Michael Reith and James Slater, who between them produced three of my favorite cocktails of 2014.

One night, Reith was working his last night at the venerable Windmill Lounge in T-shirt and jeans, and the next he was pouring fancydranks in Oak’s signature white button-down shirt, black pants and tie. “I love it here,” he says. “It’s going to be a chance to shine again.”

Slater, formerly of Spoon, is likewise happy about the move; the dynamic duo have already put their formidable imprint on Oak’s cocktail menu with classic variations that include a killer Negroni and an Old Fashioned made with Old Tom gin. Though the two are different in style, their philosophies are simpatico, and the Panamanian-born Slater aims to inspire patrons to consider them as much of an accompaniment to dinner as wine.

“We’re going to change the bar program,” Slater says. “We’re like Batman and Robin.”

Meanwhile, it’s been six weeks since the much decorated Daniel Guillen left La Duni, for … well, for what no one was exactly sure – but after more than nine years with the operation, whose cocktail operations had become synonymous with his name, it was time to make a change.

It turns out there was a beast waiting to explode: The proudly Peruvian-born bartender has been unleashing his passions for Central and South American drink culture at places like Proof + Pantry and pop-up events – like next week’s cocktail dinner with Chef David Anthony Temple at Twenty Seven.

“Most bartenders focus on classic American cocktails, maybe a few from Europe,” Guillen says. “In my case, that doesn’t make sense. I would be one of many. So I thought, what can I bring to the table?” Look for more of the same while he and cocktail guru Sean Conner, he of the metroplex’s northern hinterlands, work on an upcoming project set to launch this fall.

At Blind Butcher, Ian Reilly is putting his own spin on things after joining the meat-forward establishment a couple months ago. “He’s the shit,” a departing and obviously happy patron says one evening. “He educates you and he makes you a badass drink.”

Reilly’s variation on the Old Fashioned, which he calls the Hubris, features whiskey with a hops-based syrup, because, “If I had to envision something that men here would want to drink – guys on the prowl, out celebrating, maybe going from beer to cocktails – what better way than to use hops as the sweetener?”

It’s one way that the bearded bar man is easing his way in at a place that has carved out a niche on busy Lower Greenville. “The formula here is working,” says Reilly, formerly of Bowl & Barrel and The People’s Last Stand. “I don’t want to stomp on that.”

Barter’s closing in January dispersed a number of souls to the winds – and one of them was the understated Creighten Brown, who has resurfaced at Tate’s in Uptown. (Juli Naida, as noted in 2014’s end-of-year post, has joined Mate Hartai’s team at Remedy.)

The talented tipple maker – whose Black Monk was also among my favorite cocktails last year – went from bar-back to bartender at Barter and is already hyped to be among Robbie Call’s team at Tate’s, along with Pro Contreras and Ryan Sanders. “The whole gang, man,” he says. “Good times, good times.”

Finally, Dallas recently bid farewell to two budding talents – Lauren Loiselle, who headed the bar program at Meddlesome Moth, and bartender Damon Bird of LARK at the Park. Both also figured prominently in my 2014 list but found themselves drawn to the Bay Area (and who can blame them?). “Two of our real good friends live in San Francisco,” Bird told me before they left. “We talked about it a long time and just decided to give it a go.”

Leaving Dallas was bittersweet, but both are excited about their new opportunities: Loiselle has joined the bar team at Café Du Nord, the new venture from the owners of Trick Dog. The team knows what it’s doing: Trick Dog is among four finalists for Best American Cocktail Bar at this year’s Tales of the Cocktail Spirited Awards, to be awarded next month. “I’m super stoked,” she says.

Bird, meanwhile, has nested at Mikkeller Bar, a beer-centric spot near Union Square featuring the best of brews from around the world. While he misses the craft-cocktail world, you can tell the easygoing drink-slinger has found his people. “This was my choice place,” he says.

Coming soon: Five pop-up bars all under one roof — and it’s all for charity

As Ryan Fussell of Fort Worth’s Bird Café put it, it was a veritable who’s-who of craft bartenders, dozens of them assembled on a weekday afternoon for the first of several steps toward a purpose greater than themselves. The site was Uptown’s Standard Pour, where five boards had been posted above the bar, each topped with the name of a trusty tipple maker.

Yes, there’s a story there, but here’s what you really need to know: That on Sunday, Dec. 14, five teams of drink-slingers will face off at Henry’s Majestic as part of the Trigger’s Toys Fantasy Draft Main Event – not only for your imbibing pleasure but for the benefit of Trigger’s Toys, a Dallas charity serving hospitalized kids and their families.

As if that’s not enough reason to get yourself over there, consider this: The agency’s third annual fundraiser will feature five pop-up bars of varying tongue-in-cheek themes, and if you’re wondering how Henry’s – the recently opened Knox-Henderson gastropub in the space once occupied by Acme F&B – is going to pull that off, you’re going to have come see for yourself the little ace that bar manager Alex Fletcher has been hiding up his sleeve.

So on this afternoon, the gathered bartenders were at The Standard Pour for the “fantasy draft” that would produce the five teams of 13, along with bar concepts and sponsored spirit lineups. Organizer David Alan, the Austin-based Tipsy Texan himself, was here with his team, the lot of them dressed like referees. Actually, it wasn’t so much a draft as a draw, with each captain – Parliament’s Lucky Campbell, Bolsa’s Kyle Hilla, Knife’s Charlie Moore, LARK at the Park’s Matt Orth and, from Austin, Drink.Well’s Jessica Sanders – picking names out of a bowl to compile their teams.  While most of the crews represent the Dallas-Fort Worth area, a number are coming in from elsewhere to aid the cause from places like Austin, San Antonio, San Diego and Los Angeles.

Along with donations from sponsoring spirit producers, last year’s bash at The Standard Pour pulled in a whopping $45,000 for Trigger’s Toys, which in addition to financial aid provides kids with toys and therapy aids. With the help of the bartenders giving their time on Sunday, founder Bryan Townsend – who named the agency for his dog after seeing the animal’s positive effect on a child in need of therapy – hopes to take that to new levels.

“Not only are you changing this industry,” an emotional Townsend told the group. “What we’re doing today will change lives.”

With Dallas’ craft-cocktail cogniscenti waiting on Pimm’s and needles for the long-anticipated official openings of Michael Martensen’s Proof + Pantry and Eddie “Lucky” Campbell’s Parliament, even a practiced imbiber could be forgiven for failing to notice the other libationary locales making marks around town. And as it turns out, some of them have Martensen’s and Campbell’s DNA on them anyway.

It would be easy to get lost in the charm of this little house of a bar. A one-time vintage clothing shop off McKinney in Uptown, Bowen House evokes a Prohibition-era estate with its bookshelves and old photographs and your great-grandmother’s precious furniture. Don’t look for a cocktail menu beyond the pair of specials scrawled on the blackboard; there isn’t one. Instead, cite your tastes and preferences to steady bartenders Erikah Lushaj or Brandon Addicks, who are eagerly devouring cocktail knowledge as they strive to build a quality bar program. They’re also capable of devising their own creations – like Lushaj’s lusciously sweet 1874 (a nod to the year the house was built), a mix of rum, Galliano, vanilla and pineapple puree that she came up with for Dallas’ recent Tiki Week celebration.

DRIFTWOOD

In case you haven’t been keeping your ear to the ground, Dallas now has an absinthe bar – and it’s right there in the reinvented space at Driftwood, the Oak Cliff seafood restaurant on Davis. The minimal bar that once felt more like a holding area for diners awaiting tables has been expanded into a formidable L-shape that proudly proclaims its own identity. More importantly, bar manager Ryan Sumner’s spirit selection has been pumped up with anise-flavored concoctions from around Europe and the U.S., including 14 absinthes and three versions of French pastis. The absinthes – with notes ranging from juniper to honey-plum – can be enjoyed in the traditional louche style (slowly diluted with ice water and sugar); there’s also four related cocktails, including Hemingway’s classic mix of pastis and sparkling wine, Death In The Afternoon. Menu creator Michael Martensen says the idea of pairing absinthe with seafood occurred to him the more he researched seafood. “We’re doing like they do in the south of France,” he says. You’d do well to take in your Van Gogh experience with a round of fresh-shucked oysters – and even if you haven’t been keeping your ear to the ground, you can still keep your ear.

KNIFE

John Tesar’s new paradise of meat in Central 214’s old space in the Palomar Hotel comes with a solid bar program, too. Another project from barman Michael Martensen, it includes nods to often disregarded “retro classics” like the Long Island Iced Tea, Harvey Wallbanger and Sex on the Beach, the idea being that if the drinks are properly made with high-quality ingredients, they’re actually quite good. For the most part, that’s true – but it’s some of the bar’s other innovations that brighten my day, including the choose-your-own-ingredient Negronis or Gin and Tonics and a smooth, floral olive-oil gin martini softened with a hint of Green Chartreuse. The delicious, slightly salty Planter’s Punch was influenced by Martensen’s recent visit to Martinique: Among a group of bartenders there to learn about the island’s rum industry, the group was enjoying Planter’s Punches on a rollicking boat ride as the craft bobbed in the rough surf. “We were getting salt water in our drinks,” Martensen said. “I tasted it and thought: This is better.” He came back and made Knife’s version with a hint of house-made salt water. He says: “Dude, once you put the salt water in there, it’s like – bam! It takes me right back to the boat.”

There are probably two things you think about when you hear Meddlesome Moth: 1) the flutter and thump of a lepidopteran under the shade of your bedside lamp; and 2) beer. While there are indeed a mighty number of quality brews to be had at this Design District mainstay, cocktail program director Lauren Loiselle, with the help of beverage director Larry Lewis, has compiled a formidable selection of craft drinks, too, from a lineup of seasonal drinks (including dandy spins on the Margarita and Moscow Mule) to a top-notch supply of barrel-aged concoctions. One recent highlight: Loiselle’s divine barrel-aged Negroni, uncorked in time for last month’s National Negroni Week, with Ford’s gin, Aperol and Dolin Dry and Dolin Blanc vermouths.

TATE’S

Hump Day is already worth the trip to Tate’s in Uptown for half-price specials on most of their extensive whiskey selection, but even more so now that craft bartender Ian Reilly has joined the team on Wednesdays and Saturdays. Reilly, a one-time People’s Last Stand stalwart who’s also played significant roles behind the bar at Bowl & Barrel and Chino Chinatown, is a bit of a whiskey connoisseur who has written about Japanese whiskey for both CocktailEnthusiast.com and The Dallas Morning News. With the addition of Reilly to GM Robbie Call’s crowd-pleasing squad and a stable but solid cocktail list, Tate’s is golden right now.

Vagabond: Worth wandering over for.

VAGABOND

The former J. Pepe’s space on Greenville has been reborn as a neighborhood bar with bocce ball and a quirky array of local art. (My favorite is the one of the dog that reminds me of a Chihuahua mix my family used to have.) So yes, come to Vagabond for the art and the kitschy bar-top lamps. Come for the quality food, like excellent beef tongue pastrami. But you should also come for the drinks: The house menu devised by mixologist Eddie “Lucky” Campbell includes delicious versions of under-recognized vintage cocktails like the Bijou and Scofflaw as well as tasty modern ones like the red-pepper-influenced HydroTonic and the rum-and-white-wine-combo Ninja Sangria. (In a nod to GM Stewart Jameson, there’s a handful of Jameson whiskey cocktails, too.) Cocktail director Stephen Vasquez plans to roll out a revised menu by next month, including the excellent Aurelius, a slightly bitter, refreshing drink featuring apricot-infused Aperol that he first made for me while doing time at downtown’s LARK on the Park.

Spirit rising: Pisco promoters bring their crusade to Texas

They were here to win the war – for a country’s bragging rights, for a brand’s foothold in the marketplace. In recent weeks, a Delta Force of sales reps representing Peru’s Pisco Porton have stormed through Texas in a calculated push to promote their spirit as pisco’s popularity grows nationwide.

Leading the way was none other than Johnny Schuler, surely the only man in the world to have scored a Congressional Medal of Honor for promoting alcohol. For 30 years, the thick-haired restaurateur and distiller has circled the globe touting pisco, a brandy-like spirit produced primarily in Peru and Chile, both of which continue to tussle for the rights to claim pisco’s ancient heritage. Schuler even hosts a Peruvian TV show about pisco; in 2007 the nation’s government gave him a medal for his role in promoting a national icon.

More recently Schuler actually got into the pisco business, becoming master distiller of a new blend called Pisco Porton, produced at the country’s oldest distillery. Porton’s sales nearly tripled in 2012, according to Technonic, which sees the entire category ripe for more activity. Competitors include BarSol and Macchu Pisco.

Most people associate pisco with little more – okay, nothing more – than the classic (and delicious) Pisco Sour, made with simple syrup, lime, egg white and bitters. Schuler’s week-long mission was partly to change that. (Last year, La Duni’s Daniel Guillen – a Peruvian native – pursued a similar Dallas-based effort with his five-Thursdays-in-a-row Pisco Trail project.) Schuler’s strategy was to throw Porton’s resources at its most lucrative markets – Texas, New York, Florida and California, its four biggest U.S. customers. Porton reps were flown in from around the country; reinforcements would arrive the next week to hit Houston as well.

Schuler had a lot on his mind: The airline had twice lost his wife’s luggage, she was bugging him for his credit cards and on top of that the pisco competition was getting fierce.

But the lively pisco workshop he led at Victor Tango’s enervated him, and over the next few days he visited a number of Dallas cocktail joints to see what bartenders could do with his spirit. He was in a drink-buying mood, springing for most of their creations as he blazed through Trinity Groves’ Chino Chinatown, Oak Cliff’s Bolsa and a string of cocktail bars in Knox-Henderson.

Today’s piscos, unlike the harsh ancestors available in the past, generally have a bright, delicate grape-y taste, making them a versatile drink-worthy component. Peruvian pisco is also carefully regulated, as this 2011 New York Times article makes clear:

To be called pisco in Peru, the spirit must be made from grapes grown in designated coastal valleys from Lima south. There are 42 valleys, and 8 varietals, classified as aromatic, like muscatel or Italia, or nonaromatic, like quebranta, a high-yielding grape that is the most widely used. After the harvest, which runs from February to May, grapes are crushed and naturally fermented, then distilled in copper alembics, like Cognac. Pisco is also distilled to proof, meaning it is not diluted with water before bottling.

“I love pisco,” says Jacob Boger, bar manager at Origin Kitchen + Bar in Knox-Henderson. “It’s like brandy, except it uses a lot more of the must of the grape. It’s a clearer, brighter flavor.”

And Michael Martensen, formerly of Bar Smyth/The Cedars Social, says pisco punch will be on the drinks roster at Knife, chef John Tesar’s upcoming Palomar Hotel venture, where Martensen is helping to shape the bar program.

Schuler says the next step, once he’s convinced bars to stock pisco, is teaching bartenders what to do with it. And if it happens to be Porton they use, even better. Porton is his baby: Schuler and business partner William Kallop even designed Porton’s signature bottle itself on a cocktail napkin over a series of Whiskey Sours and Negronis, crafting its hefty, senatorial shape Frankenstein-style, with pieces pulled from what they admired on the bar shelves.  I like the lip of this one. I like the shoulders of that one. Schuler’s once gave up a pair of prize socks to win over a client. (That was in Chicago, where the client admired Schuler’s outlandish stockings du jour so much that Porton rep Megan Clark laundered them and presented them to the client the next day.)

For me, the tour’s highlights were:

  • The Apprentice, a drink designed by Chicago-based Porton rep Natalia Cardenas. It’s a play on the classic Negroni, substituting pisco for gin along with Gran Classico and Carpano Antica.
  • At Chino Chinatown, Julian Pagan’s Neile Adams, which mixed pisco with Lillet Blanc, Aperol, sweet grapefruit oil and bitters.
  • At Porch in Knox-Henderson, Beau Taylor’s Porton Morado (with an assist from Andrew Lostetter), with chicho morado (a Peruvian drink made with purple corn), lime, egg white, Velvet Falernum and bitters.
  • At Gemma, Ruben Bundy’s concoction of pisco, crème de violette, lime and simple.

“Pisco is becoming a multi-cocktail spirit,” Schuler said, and based on the evidence, he was right. “There’s nobody who loves pisco more than I do.”

About that he was probably right, too.
