NEW ORLEANS — The Season of the Drink is upon us once again: Tales of the Cocktail 2015 has come to town, marking its 13th year in the Big Easy. From around the world they’ve come – thousands of bartenders, liquor reps, spirits producers, bar owners, beverage industry scribes and cocktail enthusiasts here to witness the monster truck of all spirits festivals in the grandest of all party towns.

New Orleans is a city that knows how to drink: From its primordial jambalaya sprang more than a few now-classic cocktails – among them the mighty Sazerac, the sultry Vieux Carre, the demanding Ramos Gin Fizz and the insufferable Hurricane. We know her as NOLA, and she is among America’s craft-cocktail matrons, with heralded institutions like Arnaud’s French 75, Antoine’s Hermes Bar and the Court of Two Sisters evidencing craft culture before its modern renaissance; it’s not for nothing that the Museum of the American Cocktail is based here.

The five-day festival can be grueling, overflowing as it is with workshops, networking, happy hours, competitions, tastings, spirit-paired dinners, Bloody-Mary breakfast stations, new product unveilings, cocktail tours, chance wee-hour reunions and French Quarter camaraderie, huge parties and… even huger parties. A smorgasbord of delights, for sure; but also a test of one’s resolve; there are opportunities to be missed if one is not careful – for instance, advanced bartender trainings; tips on opening and running a bar; seminars about the flavors of Cognac, the reemergence of Canadian whiskey or the pairing of cocktails with cigars; and of course, the singularly unique city itself.

This is my fourth year at Tales, soaking in knowledge and sunshine and chronicling the shenanigans as the members of Texas’ craft-cocktail community represent the Lone Star State. Texas, along with New York and California, is among the top-represented states at the festival, which last year drew nearly 18,000 attendees. About three-fourths of those were working bartenders or industry professionals.

“Everything we do is in support of the spirits industry,” said Paul Tuennerman, co-founder of the New Orleans Culinary and Cultural Preservation Society, which sponsors the festival. “We want to ensure that flavorful cocktails are served for years to come.”

Most of the action is going down at the veritable Hotel Monteleone on Royal Street (home to the famously revolving Carousel Bar), where Wednesday morning’s annual Texas party helped kick things off for the fourth year in a row, with Austin’s bar peeps leading this year’s charge.

The bar staff of The Pastry War, Houston’s pioneering agave spirits spot, is among a handful of crews competing in Thursday’s yearly Bar Fight (which this year has gone international, with competitors representing Paris, London and Melbourne). Texas is also known to bring its oversized presence to the U.S. Bartenders Guild’s annual midnight toast, and in general you’ll find Lone Star peeps chilling at local spots like Cane and Table, One Eyed Jacks and Erin Rose.

They call Charlie Papaceno the godfather of Dallas’ craft-cocktail scene. Ten years ago, he and then-wife Louise Owens opened the no-frills Windmill Lounge in Oak Lawn, unassumingly planting the local flag of an ongoing national renaissance on a nondescript stretch of Maple Avenue.

With the easygoing maestro at the helm, the low-key bar became a practice ground and hangout spot for the scene’s growing field of practitioners – pioneers like Jason Kosmas, Michael Martensen, Eddie “Lucky” Campbell and Sean Conner. Its homey vibe and quality drinks earned the friendly dive a place in Esquire’s top U.S. bars of 2013.

“That was the place you’d go to see all your friends,” says Bonnie Wilson, director of independent bar programs for Addison-based FrontBurner Restaurants. “He nurtured a lot of us, and he was always willing to listen and guide us. We all learned from him.”

Now, the cocktail-community cache that Papaceno has earned is coming full circle. This time, it’s the godfather who is struggling: Late last year, Papaceno left the Windmill to launch his own bar, wanting to work on a new project. And then he found out he had Stage 4 cancer.

The #RallyForCharlie hashtag says it all: Charlie Pap has earned his support. The opportunities to help gets underway Thursday with cocktail specials at places like LARK on the Park and Black Swan Saloon to benefit the cause. But the major fundraising event happens Monday, when an “industry rally” is set for Industry Alley, Papaceno’s soon-to-open bar in the Cedars neighborhood.

“It’s awfully nice,” he says, sitting in the Lamar Avenue nightspot that’s still taking shape, with the lingering smell of fresh paint garnishing the air. “It’s humbling.”

Monday’s cash-only event runs from 2 to 8. Twenty bucks gets you two drink tickets and pork tacos from a whole hog presented onsite. (Additional tickets can be purchased for $5 apiece.) Bartender-led teams of four will be pitted against each other in a giant game of Twister for the cause, and a silent auction will feature multicourse group dinners at places like FT33, Bolsa and Proof + Pantry.

For weeks, the ache in his ear and jaw wouldn’t go away. The first hospital visit revealed nothing. But when the pain got so bad he couldn’t sleep, he went back again; this time the tests showed he had, essentially, cancer of the tongue.

He’s been through radiation and chemo; he’s lost 30 pounds and is moving more slowly, but it hasn’t kept him from pursuing his goal. “I’m just working and trying to get better,” he says.

As a military veteran, the VA is covering his medical costs, but living expenses are another matter, especially if he’s left unable to work for a time.

Monday’s Industry Rally will showcase the bar he’s toiled to make real.  It’s kind of two venues in one – an informal lounge as you enter, with a jukebox, sexy wall art and a bar with a heavy-duty zinc top and see-through panels underneath. In the rear is a cavernous, corrugated-metal-walled game room that will eventually feature pinball and pool tables. “It’s gonna be a split-personality kind of bar,” he says.

He’d originally wanted something much more intimate. “Then I saw this Quonset-hut backroom, and the office upstairs that’s like something out of some British gangster movie,” and he was sold.

A metal-gated courtyard alley winds toward the front door; hence the name. The “industry” part refers to the neighborhood’s history as an industrial area.

Nothing fancy here – no syrups, no tinctures, no shrubs. Except for Miller Lite ponies, all beers will come in a can. The cocktails will be classically simple. “There’s no reason you shouldn’t walk into a regular bar and be able to get a decent Manhattan or Old Fashioned,” Papaceno says. “It doesn’t have to be The Mansion but I don’t want to be a McDonald’s either. Something in the middle.”

So yeah, there won’t be any elaborate garnishes or a kitchen full of produce, but if he has his way, you’ll know you can walk in and get a quality drink in a comfortable atmosphere. It’s the kind of place he hopes people will go before or after the place they’re headed to that evening. Kind of like the Windmill – though he’s not looking to reinvent the place.

Industry Alley, he says, “is not a destination bar. It’s a hangout bar. Hopefully I can design a place that people can hang out in and feel comfortable.”

For Papaceno, that should be no struggle whatsoever.

It’s National Negroni Week. Why aren’t you celebrating?

The Negroni is among the most perfect of cocktails, a happy triumvirate of gin, sweet vermouth and the Italian bitter liqueur Campari that appeals to the bittersweet lover in you. It works as a handy aperitif or a dependable go-to, and it’s got some legs: The recipe dates back to at least the 1950s, though its rumored origins trace back to 1919, when the Italian Count Negroni asked for a variation on the Americano to be made with gin instead of club soda.

As consummate bar man Rocco Milano once said, “It’s a drink that’s greater than the sum of its parts, because they have an amplifying effect.”

That they do. Master bartender Gary Regan calls the Negroni one of the world’s finest drinks. “The balance is of primary importance in a Negroni,” he writes in The Joy of Mixology. “Using equal parts of each ingredient is absolutely necessary to achieve perfection.”

It’s also a drink that oh so willingly lends itself to multiple variations. Sub mezcal for gin and you’ve got a smoky Negroni; use bourbon and you’ve got a Boulevardier. Fancy up your sweet vermouth with Carpano Antica for some extra zing. And so on. It’s a versatile vehicle for your whims.

Which is all the more reason to celebrate the currently ongoing National Negroni Week, as proclaimed by Imbibe magazine. And it’s for a good cause – participating bars are offering the classic drink at special prices this week, with the proceeds benefiting the charity or cause of their choice: At Dallas’ Black Swan Saloon, it’s the ALS Association’s Texas chapter; at Henry’s Majestic, it’s Texas Scottish Rite Hospital for Children. Other participating bars include Proof + Pantry, Dish Preston Hollow, Twenty Seven, Victor Tango’s, Nickel and Rye, Libertine Bar and HG Sply Co.

Get over there and try the Negroni or some variation therein. (At Henry’s Majestic, cocktail guru Alex Fletcher cooked up a Campari infused with dried currant and golden raisin, for example.)  Personally, I recommend having one on the rocks with an orange twist and a dash of Pacific Ocean.

At South American-themed cocktail dinner, Peruvian bartender will showcase the character of his continent

What most people know of South American drinking culture typically boils down to a handful of things – cachaca and the Caiparinha cocktail, pisco and the Pisco Sour.

Daniel Guillen, the former beverage director for La Duni restaurants and one of Dallas’ more innovative bar talents, is on a mission to change that. For several years, driven by a notion that has since become a passion, the Peruvian-born bar man has been researching South American cocktail tradition; with his departure from La Duni, he’s ready to spring his knowledge loose upon the world in a series of events that will roll out in the coming weeks.

Your first chance to experience the fruits of his obsession will be Wednesday, when Guillen pairs up with Twenty Seven chef David Anthony Temple for a six-course dinner titled “The South American Gentleman’s Companion,” named after Charles Baker’s legendary cocktail tome of 1951.

The event will be a tour de force for the 27-year-old Guillen, who puts as much thought into presenting his cocktails as he does into making them. We’re talking about drinks served in everything from tin cans to test tubes – but as always, there is method to his madness: In addition to showcasing the continent’s drinking traditions, he’s equally amped about reflecting South American street culture.

“It’s what you see when you go out of the house and grab your first bus to work,” said Guillen, who you’ll now find occasionally behind the bar at Proof + Pantry, in the Arts District. “Street cart vendors, little candy carts near the schools – you can apply those things and come up with something off the charts.”

Guillen’s libations will be paired with Chef DAT’s Latin-inspired fare, including BBQ’s gnocchi, roasted cabrito, coconut-encrusted cod and smoked duck breast tostadas.

The 7 pm reservations-only dinner is limited to 35 people and will take place at Twenty Seven, 2901 Elm Street in Deep Ellum. Price is $120 plus gratuity.

Can’t make dinner? You can still sample a lineup of South American-inspired cocktails and other surprises at a public post-dinner reception at 10 pm, with special prices for dinner guests. Think Argentinian Boilermakers, a South American Old Fashioned and Guillen’s celebrated Rosemary’s Affair, which earned him regional honors from Bombay Sapphire gin and was among my favorite cocktails of 2013.

 

Saturday’s Off to the FARM: Cultivating cocktails and cuisine for a good cause

It’s been way too long since the vivacious Amber West has loosed her earthy mixology mettle upon the world, but that’s all going to change on Saturday with Off To The FARM, an epicurean event benefitting Project Transformation, an education-oriented agency serving low-income kids throughout North Texas.

There will be goats. And aquaponics. And hors d’oeuvres from chefs like Hibiscus’ Graham Dodds, Garden Café’s Mark Wootten and Adam West of The Porch. And of course, drinks from Amber West, whose talents once shone behind the bar at Central 214 (where Dodds was chef) before she took a job as Texas rep for Vermont-based Caledonia Spirits.

Off to the FARM runs from 2 to 6 pm Saturday at 314 W. Belt Line in Desoto, just outside of Oak Cliff. The farm facility houses both FARM (Farmers Assisting Returning Military) and Eat The Yard.

Project Transformation, a non-profit education organization offering after-school and summer programs to low-income youth, is putting on the event in partnership with FARM. Participating chefs will create their hors d’oeuvres using the farm’s locally grown produce, and it’s a fair bet that Amber’s cocktails will include some of that fresh stuff, too: As bar manager at Central 214, she had a particular knack – and an undeniable passion – for highlighting seasonal fruits of the land in her cocktails. But then Caledonia stole her away, and then she became even busier still, taking time off to have her second daughter, Sage.

“I’ve supported Project Transformation for the last three years,” she says. “Being a mom, my heart just went out to these kids who don’t have anywhere to go after school. This really saves them from being on the streets.”

And with part of Project Transformation’s curriculum including cooking and gardening workshops, she was sold.

West’s cocktails will celebrate springtime and complement the event’s Southern-style menu. And of course, they’ll feature Caledonia’s honey-kissed Barr Hill Gin. And probably herbs and honeysuckle too.

In Mexico City, a craft-cocktail scene takes root

It’s a scene still in the nest, but you wouldn’t know it from the mob scene at Maison Artemisia, an old-timey-chic urban hideaway in Mexico City’s trendy Roma neighborhood. As befits the global metropolis of 8.8 million, the bar’s three-deep lines are plush with people from all over – but on this night, many are in Mexico City for the most recent episode in a series of cocktail and spirits conferences set in places around the world.

Tales of the Cocktail (TOTC) – the spirits-minded juggernaut behind the eponymous annual festival every summer in New Orleans – came to Mexico last week, its latest push to highlight up-and-coming mixology markets worldwide as the U.S.-led craft-cocktail renaissance continues to chart new terrain. It’s called Tales of the Cocktail on Tour, and like a pared-down version of its mammoth mothership in NOLA, the bartender-oriented event is a mix of workshops, distillery tours, networking, distributor-sponsored brunches and parties and the chance to visit the bars leading the local charge.

“We pick markets that we see bubbling up and shine a spotlight on them,” said TOTC founder Anne Tuennerman. “When we say we’re going to a city, people think, there must be something going on there.”

The intent is to showcase each city’s potential for distributors and brand ambassadors and to enrich the local soil of knowledge with the wisdom and talents of industry veterans and experts like tiki writer Jeff “Beachbum” Berry and Esquire columnist David Wondrich. In turn, visiting bartenders gain insight into local ingredients and methods to take back home. Sponsor companies build brand loyalty. Ultimately, the rest of us get to drink better drinks in more places. Everybody wins.

The Tales on Tour gatherings are held in successive years before moving on to a new city, leaving the young bird to fly on its own. Mexico City is the third city to fall into the TOTC spotlight; Vancouver and Buenos Aires were before that. “What’s really cool is to see these cities after Tales has been there once,” said bar consultant Don Lee of Cocktail Kingdom, an online bar-implements and spirits literature seller. “They’re excited to grow.”

Having Tales come to Vancouver “was huge,” said bartender Dani Tatarin of the city’s Keefer Bar. “It gave us an extra push of publicity that people could see, and it highlighted the talents of people in the industry. Since then, we’ve kind of nurtured it along.”

The Mexico City attendees came from all over, from locals like Carlos Mendoza and Mauricio Hernandez of Podcast Borracho (“Drunken Podcast”) to a sizable posse from Guadalajara. There were bartenders from Austin, Key West, Miami, New York and Bellevue, Wash., cocktail writers from Seattle and Paris; groupies from Boston. Others came from countries like Puerto Rico, Brazil, Russia and Australia.

One afternoon, we piled into coaches for a tour of Bacardi’s Mexico plant in Cuautitlan Izcalli, an hour away from central Mexico City toward the state of Queretaro. Along the way, we rolled past graffiti’d embankments, homes with rooftop clotheslines and sprawling hillside communities before reaching the plant, where we found music, a carnivore’s lunch and, of course, mojitos and Cuba Libres. My favorite of the batch was La Familia, a well-rounded rumba of Bacardi, orange juice, Fino Sherry and sweet vermouth served in a coupe with a side of gooey, delicious chocolate-glazed popcorn or a slab of chocolate. It was a pleasingly perfect match.

In the facility’s musty, sweetly aromatic barrel storage warehouse, overhead misters moistened the air – and our hair.  “It smells so good in here,” said bartender Juan Carlos Machuca of Guadalajara, where he’s creating cocktails for a new restaurant.

The next day brought a lineup of workshops and discussions, from the merits of sugar and modern bar technique to the pineapple as a symbol of hospitality and the “dark ages” of mixology (1958-1977), when convenience and quantity bested style and substance. “The Margarita suffered tremendously in the 1970s,” said writer Berry. “The blender was basically The Devil back then. It made life easier for bartenders.”

Each night brought chances to sample Mexico City’s fairly new but mostly impressive craft-cocktail culture, sprouting primarily in the trendy Roma and Condesa neighborhoods. (That’s also true for mezcalerias, such as La Nacional and Sobrinos, that specialize in tequila’s smokier cousin.) Spirits like Diplomatico Rum and Chivas Regal sponsored special menus during Tales’ run and bartenders from around the world came to help staff the busy bar nights. In general, drinks ran about $6-12 U.S.

“Designer cocktails are still a very small niche,” said a local food and drink blogger who goes by the handle Gastronauta. “It’s growing, but slowly.”

In addition to Maison Artemisia and pair of rogue visits to mezcalerias, I was only to get to barely a half-dozen spots on Tales’ itinerary, including Baltra and Bar Lilit. These were my three favorites:

LICORERIA LIMANTOUR, the city’s first real craft-cocktail bar when it opened three years ago. Next door to mezcal-minded Sobrinos in the Roma area, its two floors of well-crafted cocktails and dark elegance overlook busy Alvaro Obregon Avenue. Visiting mixologist Sebastian Gans’ of Paris’ Candelaria made one of my favorite cocktails of the week, the apricot-shaded Orange Is The New Black, with tequila, mezcal, carrot, kaffir lime, yellow lime and ginger. Even the shot-sized sangrita Gans made to complement a bit of straight tequila was outstanding, with mango, tomato, coriander, lime and chipotle.

JULES’ BASEMENT, in the ritzy Polanco neighborhood, is a nicely conceived speakeasy below a Mexican restaurant accessed by what at first looks to be the door of the restaurant’s walk-in freezer. (There is a large, suited doorman outside. And a small hostess.) If you’re lucky enough to be on the list, the door will open, and the sound of thumping bass will signal the dark otherworld below. Down the stairs and you’re in a low-ceilinged, dance club atmosphere where able bartenders crank out house drinks and classics like the Cucaracha, Old Cuban and Mary Pickford. Overall, not typically my scene, but the drinks were well executed and the service was top-notch.

BAR FELINA: If I lived here, this low-key but classy refuge sited in the quirky, subdued Hipodromo neighborhood near Condesa would be my hang. There, Minneapolis transplant Jane Soli-Holt could be credited for one of the best Old Fashioneds I’ve had in some time – a beautifully presented Almond Old Fashioned made with Angostura 1919 rum, almond-cinnamon syrup, orange-allspice bitters, Angostura bitters and a thin curl or two of mulato pepper. Its sweetness spoke of depth rather than cloyingness. The bar’s casual vibe was accented by a DJ spinning classic vinyl dorm-room-style. It was more of a den in which to enjoy fine drinks and talk about big ideas than a place to see and be seen.

Beyond that, Mexico City itself was a sensory delight, from its plentiful in-city parks to the magnificence of the Palacio de Bellas Artes and the grandiosity of Plaza de la Constitucion. I enjoyed one of the best street-taco experiences ever at hole-in-the-wall Los Cocuyos, no doubt just the tip of the iceberg. It was easy and inexpensive to get around; Uber operates in Mexico City now along with worthwhile competitors, such as Yaxi. I loved how street-crossing was a constant game of Frogger, as equally well played by the elderly as the young; cars and people move in closer proximity on busy city streets than we are used to here. And one of the finest views in the city can be had from an eighth-floor café in the Sears Department store.

But for cocktail fans, it’s good to know that you can visit the city and find a decent drink, a situation that in Tales’ wake seems only destined to improve.

“You have no idea how important this is to us,” said Philippe Zaigue, Mexico brand ambassador for Havana Club rum. “It’s allowed us to communicate to the world what we’re doing. And, it will give us the feedback we need to make things better.”

TGI Fridays crowns its “World’s Greatest Bartender” at annual competition in Dallas

They bounced shakers off forearms, caught glasses behind their backs and tossed liquor bottles around like jugglers’ pins. By night’s end, one of them had been crowned the best bartender of all — at least, that is, within the extensive, red-and-white-striped family of TGI Fridays, which held its 24th annual World Bartender Championship Thursday night at Dallas’ House of Blues. More than 8,000 TGI Fridays bartenders around the world had vied for the chance to be one of the night’s 10 finalists with a shot at the $10,000 top prize. The title-round air was abuzz, with the faces and names of the finalists plastered on walls, video screens and waveable flags for a wall-to-wall, cowbell-shaking crowd.

TGI Fridays’ horde-pleasing drinks – the global chain sells 3 million Long Island Teas a year – are well-known, but the Carrollton-based chain can also be credited with (or blamed for, depending) popularizing flair – the kind of theatrics associated with the Tom Cruise film Cocktail – when it started holding flair bartender contests in the mid-1980s.

While the World Bartender Championship, which started in 1991, emphasizes things like customer engagement, service and bartender knowledge (some of which had already been evaluated in a previous compulsory round) the practice of flair perseveres. Bryan Bonafacio of the Philippines sent a lime wedge airborne and caught it in a shaker behind his back before sliding it into a waiting cocktail. Fernando Soto of Illinois poured a drink into a glass that he’d perched on his forehead. Others pulled off moves too complicated to explain.

Along with lively banter (to that end, Peru’s Alexander Barrenechea was my favorite for his easy humor and likeability), some kept the bar-side judges entertained by putting them to work as drink shakers while they tended to other tasks, trying to stay within the given time limits. Each bartender had eight minutes to make five different drinks ordered from the company’s inventory of 100-plus cocktails, working to the sizzling guitars or thumpity-thump beats of their chosen playlists.

“It takes incredible discipline, focus and passion,” said Matt Durbin, the contest’s 1994 champ who is now TGI Fridays’ vice president of brand strategy and menu innovation. “We like to think that Fridays is the bedrock of bars. This allows us to recognize and celebrate our bartenders.”

While flair is among the techniques bartenders can use to interact with guests, Durbin said judges prioritize “working flair,” moves that a bartender could actually incorporate into a busy shift rather than those unveiled for competition’s sake. The U.K.’s Russell Ward, for example, last year’s runner-up, was relatively no-frills compared to some but cranked out his drinks with smooth confidence, “You have to look like you do it every day,” he’d told me earlier. “Not like it’s just something you just practiced to do here.”

Where New Jersey’s Ram Ong fell on the spectrum was unclear. Like Ward, he was in the final round for the third time, and aside from bringing his own pineapple juice – in a pineapple, of course – he pulled off my favorite move of the night, catching a bottle of Grand Marnier tossed overhead on one forearm while balancing a second Grand Marnier bottle on the other forearm. But Ong’s theatrics undermined him in the end, his time elapsing before he could finish building his final cocktail.

Meanwhile, Stavros Loumis of Cyprus, another third-timer who entered the evening in first place after a stellar effort in the compulsory round, saved a Cuba Libre order for last, starting the drink with just over a minute left in his session. Earlier, he’d told how a twist of lime elevated a simple rum and Coke into the classic cocktail, and now, as the seconds ticked away, he dared to position an ice-filled glass atop the flat end of a bar spoon, balancing the spoon’s other end on his forearm before pouring rum into the glass and finishing with time to spare.

In the end, third place went to the energetic, engaging Bonafacio, who may have coined the phrase “Don’t you panic; it’s organic;” while second again went to the U.K.’s Ward, who was also voted the fan favorite. Stavros was named champ, taking home a propeller-shaped trophy in addition to the prize money.

The annual competition also raises money for hunger-relief agency Feeding America, and TGI Fridays presented the organization with a $200,000 check midway through the final round.

As Ryan Fussell of Fort Worth’s Bird Café put it, it was a veritable who’s-who of craft bartenders, dozens of them assembled on a weekday afternoon for the first of several steps toward a purpose greater than themselves. The site was Uptown’s Standard Pour, where five boards had been posted above the bar, each topped with the name of a trusty tipple maker.

Yes, there’s a story there, but here’s what you really need to know: That on Sunday, Dec. 14, five teams of drink-slingers will face off at Henry’s Majestic as part of the Trigger’s Toys Fantasy Draft Main Event – not only for your imbibing pleasure but for the benefit of Trigger’s Toys, a Dallas charity serving hospitalized kids and their families.

As if that’s not enough reason to get yourself over there, consider this: The agency’s third annual fundraiser will feature five pop-up bars of varying tongue-in-cheek themes, and if you’re wondering how Henry’s – the recently opened Knox-Henderson gastropub in the space once occupied by Acme F&B – is going to pull that off, you’re going to have come see for yourself the little ace that bar manager Alex Fletcher has been hiding up his sleeve.

So on this afternoon, the gathered bartenders were at The Standard Pour for the “fantasy draft” that would produce the five teams of 13, along with bar concepts and sponsored spirit lineups. Organizer David Alan, the Austin-based Tipsy Texan himself, was here with his team, the lot of them dressed like referees. Actually, it wasn’t so much a draft as a draw, with each captain – Parliament’s Lucky Campbell, Bolsa’s Kyle Hilla, Knife’s Charlie Moore, LARK at the Park’s Matt Orth and, from Austin, Drink.Well’s Jessica Sanders – picking names out of a bowl to compile their teams.  While most of the crews represent the Dallas-Fort Worth area, a number are coming in from elsewhere to aid the cause from places like Austin, San Antonio, San Diego and Los Angeles.

Along with donations from sponsoring spirit producers, last year’s bash at The Standard Pour pulled in a whopping $45,000 for Trigger’s Toys, which in addition to financial aid provides kids with toys and therapy aids. With the help of the bartenders giving their time on Sunday, founder Bryan Townsend – who named the agency for his dog after seeing the animal’s positive effect on a child in need of therapy – hopes to take that to new levels.

“Not only are you changing this industry,” an emotional Townsend told the group. “What we’re doing today will change lives.”

 

Cointreau’s bartender book club puts history into glasses and craft-cocktailing into perspective

DALLAS – Early last summer, in the private parlor at Sissy’s Southern Kitchen, five weathered books spread out on a vintage trunk – among them Trader Vic’s Book of Food and Drink (1946), Robert H. Loeb Jr.’s Nip Ahoy! (1954) and Obispo y Monserrate’s Bar La Florida Cocktails (1937). “Please be careful,” said Emily Perkins, regional rep for Collectif 1806, a project of Remy Cointreau USA. “They’re very old.”

With the seeming ubiquity of craft cocktails these days, it’s worth remembering that the scene is less revolution than revival: The practice dates back more than a century, and while there’s plenty to appreciate about craft cocktails – the culinary parallels, a culture of hospitality, their ability to take the edge off a day – one of the things I personally love about them is the history that serves as their base. When you make a proper Old Fashioned or Aviation, in other words, you’re building something that someone made pretty much exactly the same way a hundred years or more before. While the tools, technology and the range and quality of ingredients have all since improved, the drinks that have come and gone have left an enduring canon of classics, and the craft at heart is the very one conducted for decades upon decades.

That’s a notion thoughtful bartenders appreciate, and it’s something that Remy Cointreau, the U.S. branch of the French distiller known for its eponymous orange liqueur, has seized upon in a welcome and opportune way. The company has gradually compiled an archive of 250 vintage cocktail volumes, and for the past year, Dallas has been lucky to be among a small circuit of cities in which books are periodically presented for perusal through Cointreau’s bartender education and support arm, Collectif 1806. (Other cities include Miami, San Francisco, Chicago and New York.)

In addition to Sissy’s, Dallas “book club” events have been held at Barter in Uptown, Meddlesome Moth in the Design District and most recently, Abacus in Knox-Henderson.

The evening hours passed at Sissy’s Southern Kitchen as the select group took turns poring through the quaint and dated pages. Smartphones snapped photos of recipes, illustrations or inspiring prose. “I’m such a sucker for vintage illustrations,” Perkins said. “I love the books with the crazy drawings and the old ads.”

Meanwhile, five rounds of cocktails appeared, one from each book – including the sweet, mild Honeysuckle, from Angostura-Wuppermann’s Professional Mixing Guide (1941); the luscious Ian’s Fizz, from Trader Vic’s Bartender’s Guide (1947); from Bar La Florida Cocktails, the lesser-known classic Brandy Daisy.

“I love old books,” said Julie Brown, who tends bar at nearby Hibiscus. “Trader Vic’s is, like, every bartender’s first book.”

Cocktails at these events naturally showcase the Cointreau line of products, which includes The Botanist gin, Bruichladdich Scotch whisky and Mount Gay rum. In general, original recipes are adhered to as faithfully as possible, though they aren’t necessarily what Perkins would serve to modern palates. “You’d have to tinker,” she said. “Most (of the old drinks) are really tart; they’re not using a lot of sugar. Before the 1940s it was rare and expensive. People didn’t have access to a lot of sugar and ice. They were stronger, boozier drinks.”

Despite the light atmosphere, the books are handled with a level of care that sometimes surprises Perkins, who’d initially been reticent to release the rare volumes, some frail and plastic-sleeved, from her protective embrace. “It was hard to let go of that,” she said. But “when it comes to handling the books, there’s a lot of respect and decorum.”

That’s one reason attendance is limited, to weed out looky-loos in favor of more serious practitioners. You wouldn’t want just anyone getting their paws on Harry Johnson’s classic The New and Improved Bartender’s Manual (1900), for example, or V. B. Lewis’ The Complete Buffet Guide (1903). Some of the lucky few even receive access to Cointreau’s online archives. “A lot of these are what people call proprietary secrets,” Perkins says. “It’s supposed to be a tool for bartenders who really care. It’s Holy-Grail-type stuff.”

Those at Sissy’s included Matt Orth of LARK at the Park, Parliament’s Stephen Halpin, Lauren Festa of The Rosewood Mansion at Turtle Creek and High West brand ambassador Chris Furtado. There was also Parliament’s Daniel Charlie Ferrin, who was proud to already be in possession of Trader Vic’s Bartender’s Guide. “I bought it for $12 on Amazon,” he said. “Except the dust jacket is in pristine condition. It’s literally sitting in my car right now.”

In addition to the recipes, “I love the cartoons,” Ferrin said. He picked up the book and flipped open the cover to show an illustration of a bartender pouring liquid from one mixing glass into another. “In fact,” he said, “my next tattoo is going to be based on this one – except it’ll be a monkey, with a fez and a unicycle.”

The recipes are often preceded by wry insights or anecdotes. Introducing the rum-based Pikaki, the renowned Trader Vic wrote in his Book of Food and Drink (1946): “I’d save this one for my visiting great-aunt who, when approached as to her idea of a little before-dinner stimulant, shakes her finger at you reprovingly, ‘Well, just one.’ She’ll probably weaken and have two and go into dinner with her transformation askew.”

The books also recall a time of unabashedly flowery prose and titles – for instance, Charles H. Baker Jr.’s The Gentleman’s Companion, Vol. 1 (Being An Exotic Cookery Book, or Around the World with Knife, Fork and Spoon).

So taken was I with the simple but noble sentiments of the finely distilled introduction to the Book of Food and Drink – which in 1946, was priced at $3.95 – that I tracked down my own copy of the book for my home stash. It reads: “Dedicated to those merry souls who make eating and drinking a pleasure; who achieve contentedness long before capacity; and who, whenever they drink, prove able to carry it, enjoy it, and remain gentlemen.”

“It’s dedicated to us,” Perkins said. “People who love to indulge in finer things – but it says never go overboard, treat people with respect. It’s idealistic and sweet.”

For this group, the books are more than novelty: They’re passed-down knowledge and perspective and a reminder that those who practice the craft today are part of something much bigger than themselves.

The funnest way to help veterans grow organic produce involves pumpkins and cocktails

It’s pumpkin-carving season and as long as you’re going to handle a big knife, you may as well do it with cocktails – and for a good cause, besides.

Fort Worth’s Pacific Table is teaming up with Caledonia Spirits to host a Halloween-themed happy hour and pumpkin-carving contest to benefit veteran-based farming programs, including Dallas’ Eat The Yard, a veteran-owned urban farm that I profiled in The Dallas Morning News last year.

The Oct. 30 event runs from 5:30 to 7:30, with $6 Halloween-y libations from bartender Maria Ortiz showcasing Caledonia’s Barr Hill vodka, gin and barrel-aged gin – for instance, the Pumpkin On A Hill, with vodka and house-made pumpkin-spice syrup. Vermont-based Caledonia, which made its Texas debut six months ago, incorporates raw honey in its distillation process.

For $12, you’ll get a pumpkin and carving tools — with a cocktail included. Or bring your own pumpkin and pay just $6 to enter the contest. (Prizes include dinner for two at the Pacific Northwest-themed restaurant.) Not into carving? Just come and enjoy the spectacle along with $6 cocktails — and maybe drop a little donation in the “Cash-O-Lantern.” So many options: The world is your pumpkin.

Reservations and Halloween costumes are encouraged but not required.
