Hudson Whiskey: It’s what’s for dinner.

In the category of Why Doesn’t This Happen More Often, cocktail-paired dinners is one of the top things on my list. I’ve attended several over the last two years, which for the same time period is fewer times than I’ve been to the dentist, or dropped everything to watch Ferris Bueller’s Day Off on cable, and that’s just wrong.

Well, here comes Whiskey Cake to right the ship. On Monday, Oct. 28, the Plano restaurant and cocktail joint will host Carve and Craft, a five-course dinner highlighted by cocktails featuring the very excellent Hudson Whiskey collection. If you know nothing about Hudson, that’s not a problem: Gable Erenzo, the company’s owner, distiller and brand ambassador, will be on hand to fill in the blanks.

If you know nothing about Whiskey Cake, that’s an issue. The place emerged onto the scene about two years ago and was one of the Dallas-Fort Worth area’s original craft cocktail bars. Its beverage program, still under the able leadership of Sean Conner, mirrors Whiskey Cake’s self-proclaimed “farm-to-kitchen” philosophy, with drinks incorporating items from the restaurant’s adjoining garden.

From the looks of it, this dinner will not suck. (A menu preview is below.) The best part is, it’s only 35 bucks.

Capacity is limited to 60 and remaining availability is very limited. Call the restaurant to make a reservation, but if you don’t catch this one, there’s more good news: This won’t be your last chance. “We do dinners like this pretty much quarterly,” says Whiskey Cake’s marketing director Katie Allen.

The best way to keep tabs on the action, she says, is to follow the restaurant’s Facebook page.

Here’s an abbreviated version of the menu for the Oct. 28 dinner, which gets underway at 7 pm:

Sending out a yes-oh-yes: Manhattans in a bottle

I’m the kind of guy who goes into a place and sits at the bar. I appreciate the interaction with the bartender, seeing the way he or she practices the craft, knowing that the drink I’ve ordered is being made just for me. That personal attention, and the work that goes into it, is part of the experience.

That’s why I’ve been reluctant to embrace the idea of bottled cocktails, and Francisco Terrazas, who manages the bar program at Austin’s Fino, knows my pain. The idea of pre-made batches of drinks theoretically annoyed him, even though he knew it was a trend — one that actually dates to the early 1900s — that would come sooner or later as Austin bartenders began looking for innovations.

Terrazas grappled with the idea until one day he began to see it in a new light. He’s how he puts it: When you buy clothes, you generally don’t expect to have the fit exactly right or know who made your outfit; you just grab something off the rack. If you want it just so, you go to a tailor.

Bartenders are the tailors of the drinking world. “If someone really wants a drink tailored to their specifications, they’re going to go sit at the bar,” he says. “Meanwhile, people on the dinner floor might want a good drink, but they’re willing to sacrifice a bit of the experience.”

And though it’s not something he’s tried yet, he realizes that for bartenders, it’s a good way to produce quality drinks more efficiently.

That’s the idea at The People’s Last Stand in Dallas, where bartender Chris Dempsey says the three cocktails produced daily have been selling well.

By the time I and a friend showed up late Saturday, the bottled Dark and Stormy’s were already sold out. Instead we tried the Harvey Wallbanger and something called a Time Bomb: Each was $7 and came in an old-fashioned-style soda bottle; drinking it reminded me of drinking fruity pop as a kid. Though I missed the ice shards that lusciously grace the first sips of a freshly made drink, each went down smooth, maybe too much so.

“I’m partial to this,” my friend said, indicating the Harvey Wallbanger (vodka, Galliano and OJ). “But I think it could be dangerous. It kinda reminds me of a wine cooler.”

But People’s thinks it’s on to something. “The fact that they sell out every day says something,” bartender Anthony Polo said.

I protested, citing my desire to know a bartender had made something just for me.

“But in a sense, I did,” Polo said.

Meanwhile, over at Bowl & Barrel, Ian Reilly is offering Manhattans and other cocktails in barrel-aged-and-bottled form.

It’s something the bar, owned by Free Range Concepts, plans to make a staple in coming months. As Reilly tells it, Josh Sepkowitz of Free Range Concepts, which owns Bowl & Barrel, called him over one day to see what he knew about barrel-aged cocktails, a practice that has gained steam over the last couple of years. (As far as I know, it was Sean Conner, of Plano’s Whiskey Cake, who first tried it around here, and since then several others have given it a whirl, pre-batching Negronis and Tridents and more.)

Barrel-aging cocktails can alter their character by infusing oak and/or other flavors into the drink; the process can also soften the sting of strong flavors; the barrel-aged Negroni I had at Whiskey Cake had a mellowness that enhanced the drink without reducing its charm.

As it turned out, Reilly did know a thing or two about barrel-aging, and he knew that not only could the practice affect taste, it could also promote efficiency on crowded bar nights. He was also able to get his hands on some stylin’ clear bottles, as well as someone able to etch them with the Bowl & Barrel logo. Everything fell into place.

He decided on the classic Manhattan as his first cocktail, one that would appease his Old-Fashioned-leaning customers with its mix of rye whiskey, bitters and sweet vermouth. (Cocktails without natural products that can go bad, like citrus, are preferable when barrel aging.) He then added two others – the white-whiskey-based Slow Hand and the Lucien Gaudin, a cocktail that Reilly named after a fencer when he himself worked at The People’s Last Stand; it features gin, Cointreau, Campari and dry vermouth. “It’s somewhere between a Boulevardier and a Martinez,” he says.

A fourth cocktail is on the way. So far Reilly has produced 31 liters worth of pre-batched cocktails, and he’s working on another 26. “We want to have the shelves lined with product ready to go,” he says.

Since launching a week ago, he’s sold nine or 10 bottles’ worth of cocktails in all. The mixtures have been bottled, sealed with wax and stored in the freezer behind the bar. Order a Manhattan and it’ll show up in a fluted martini glass. “You pour four ounces and put a maraschino cherry in there and you’re ready,” Reilly says. Speed.

The drinks are $10 apiece, and a group can spring for a whole bottle at $75. Last week, I and some friends took the Manhattan plunge even if the hot June weather didn’t exactly make us pine for dark spirits. The verdict was largely positive, though the fluted glass took me by surprise; I also missed the feeling of knowing the bartender was behind the bar making a drink just for me.

Had I been there on a packed night, well into my evening with service markedly slowed, I would have had a much different reaction: happy to get my perfectly fine and chilled Manhattan while others around me growled and waited for their craft cocktails to be made, giving me the evil eye while I preened with Brad Pitt-celebrity satisfaction and — well, now I’m getting carried away.

Reilly, too, has gotten carried away, and for that you might be grateful. Share in the experiment: He’s got a fancy algorithm “that a much smarter friend” made for him, telling him how long each batch has to sit in each differently-sized barrel to achieve his desired result. A three-liter barrel might correctly age in a month, for instance, but a 10-liter one might take more than twice that long. He’ll test them along the way.

“It’s fun,” Reilly says. “I get to be the cellar master here. When I bottle everything, I’ll imagine I’m some guy in Cognac…. I don’t have millions of dollars for a still, so this is the next best thing.”

Shrubs, purees, dancing in the streets: The report from Dallas’ Margarita Meltdown 2013

They came to do battle with guava and chili, with basil and peppers and passionfruit puree. Slinging their drinks in shot-sized portions, they implored the parched and perspiring throngs to cast votes in their favor, each angling for the $1,000 crown of Margarita Meltdown 2013.

The third annual event pitched its tents in Oak Cliff’s Bishop Arts District Sunday, and if you came to knock down a little tequila, it did not disappoint: Around 30 restaurants offered their own spin on the classic Margarita, cranking out mini-cocktails dressed oh so many different ways — punched up with pineapple, couched in horchata, spiced with serrano chile.

Everybody started with a common ingredient: Milagro tequila blanco. Plano’s Whiskey Cake, which took last year’s title with bartender Bonnie Wilson’s frozen “Push-Up” Margarita, made another strong push this year with a drink served not in a glass but in a plastic squirt gun. They ran out within two hours.

Here’s how it all worked: Checklists were distributed. Have a mini-Margarita, cross the place off your list. Then vote – via text – for your favorite four. The machinations were a mystery, and voting continued for an hour past its scheduled cut-off point. Then again, the queues moved slowly; I still managed to sample 18 Margaritas in all, from Oak Cliff Social Club’s grapefruit and Squirt-splashed version to the tasty peach margarita pitched up by Cyclone Anaya’s of Oak Lawn.

Sunset Lounge embraced the tiki with a “Zombie-rita” partied up with Bacardi 151 rum, Sailor Jerry spiced rum, Solerno blood orange liqueur, Velvet Falernum, Angostura bitters, cinnamon syrup and lime, grapefruit and pineapple juice.

“This is the longest line I’ve had to wait in,” a girl complained as she waited to try the Standard Pour booth, where bartender Armando Guillen shook up batches of his special Margarita blend in real time. “It’d better be f-ing worth it.”

And it was: Guillen’s drink featured orange-tea-infused tequila, ginger and passionfruit purees, blood orange bitters and a five-chili balsamic reduction – sweetly alluring with lots of character.

La Duni’s Daniel Guillen – Armando’s brother – also scored with his Bohemia Margarita, flavored with Becherovka (a Czech herbal liqueur), lime and a house-made cordial of cucumber, pepper and star anise, finished off with a Tajin chile-lime powder rim.

So did Asador, whose fruity watermelon and basil version shone with subtle heat, making use of sambal (a Southeast Asian chili sauce) and a ginger/sea salt foam. Another stand-out: The Lucky One, from the just-opened Mutts Canine Cantina, dolled up with a strawberry, cucumber and rosemary shrub for some balsamic beauty. (Though my companion Rachel cleverly suggested sprucing it up even more with a Pop-Rock rim.)

DaLat came prepared to serve up 2,300 of its spectacular “Vietnamese Margaritas,” which were really not Margaritas at all, but with their prune-candy and chili-flaked lime one-two punch kept the booth’s lines long and lingering.

The best of the bunch? For one, Mesomaya’s avocado-pineapple Margarita made with Cointreau – always a plus in my book – and laced with Tajin. “It’s mellow and yellow,” my worthy sidekick said.

My favorite, though, was “The People’s Last Pequin,” from The People’s Last Stand, a complex punch incorporating smoked strawberries, honey agave and two infused tequilas – one with chile pequin, the other with vanilla bean – and, naturally, Cointreau. The rim was a mix of lime zest, smoked sea salt and guajillo chili. All-around goodness.

So who won? Well, does it really matter? Suffice it to say that the victorious cocktail was the one drink that both my companion and I tossed away without finishing, so horrendous was its assault upon our palates. And in case we thought we were mistaken, the guy behind us practically spit his out. Who knows: Maybe we got a bad batch. But really, by the time the results were announced, spirits were high, and this small but populous stretch of Bishop Arts had gotten its club vibe on, with booming beats and dancing in the streets, so for all anyone cared – except for a contingent of disappointed bartenders – the Sonic down the street could have been named winner and the party would have gone on. And it did. Dallas, I salute you.

Want to make your Sunday dinner count for something? Consider stopping by Shake for Second Base, a special event benefiting breast-cancer research from 6 to 10 p.m. Jan. 13 at Sissy’s Southern Kitchen, 2929 N. Henderson in Dallas.

An all-female bartender lineup will be shaking things up. For just $10 you get some of Sissy’s formidable fried chicken, plus a cocktail, with subsequent drinks priced at $7. All proceeds will go to a breast-cancer research fund, say organizers Bonnie Wilson (of Whiskey Cake) and Trina Nishimura (of Cedars Social and soon-to-open The Establishment).

The event will also feature a live auction where you can snag an hour-long cocktail date with your favorite bartender, with guys and gals up for the bidding. Even female suppliers are getting into the act, with spirits provided by brands such as Ketel One, Cointreau, Deep Ellum Brewing and Bombay Sapphire.

According to the American Cancer Society, one in eight women will deal with invasive breast cancer during their lifetimes.

A double-whammy of feel-good

A great cocktail: Definitely a day-brightener. Giving to a good cause: Ditto. Doing both at the same time: Awesome.

Consider it charitable multi-tasking. From 6 to 10 p.m. Tuesday, you can enjoy New York-themed cocktails AND benefit victims of Hurricane Sandy as four of the city’s best barmen do duty at Dallas’ Windmill Lounge to raise funds for bar and restaurant owners in Manhattan’s East Village.

The effort, called All 4 1, is the handiwork of four accomplished bardudes — Omar Yeefoon and Julian Pagan of Cedars Social, Libertine Bar’s Mate Hartai and Marquee Grill & Bar’s Jason Kosmas — who last week stepped behind bars in Austin, Houston and San Antonio raising money for the cause. Originally the four had been looking for a way to do guest spots around Texas, but when the largest Atlantic storm on record pummeled the East Coast last month, they suddenly had a purpose.

Kosmas, a New York transplant who still co-owns Manhattan’s Employees Only, personally knew people in the East Village whose businesses had been devastated by the superstorm. A fun idea turned into a focused one.

“We’re just trying to make sure some of these places don’t shut down, or at least not for long if they do,” Yeefoon said.

Tuesday night, the four will be at the old-school Windmill Lounge making New York-themed cocktails for a minimum $5 donation apiece. T-shirts will be available too.

“Of course we have a good time while we’re doing it, but now we’re, like, really into the charity,” Yeefoon said.

Go. Be like Omar. Have a good time while you’re doing it, and be really into the charity. It’s a double-whammy of feel-good.

The event is one of two going on around town Tuesday as the ongoing Manhattan Project moves northward to Plano’s Whiskey Cake (not Hibiscus, as originally planned). From 7 to 9 p.m., the bar will be dishing up free Manhattans in a periodic series of events designed to promote whiskeys, and the classic cocktail, throughout the colder season.

The Mixologists Take Manhattan

The Manhattan: It’s the drink mixologist Gary Regan says “changed the face of cocktails.”

Featuring rye whiskey with a bit of vermouth with a sprinkle or three of bitters, it was arguably the first drink to draft vermouth as a sidekick. That was, as they say, a damn game-changer. The Martinez followed, then the Martini, and eventually all manner of cocktail goodness gracing humanity today.

In case you hadn’t noticed, brown spirits are everywhere, which not only means that fall is officially here but also that if you haven’t turned back your clocks by now, you’re way behind the curve. That would make you highly unworthy to participate in the aptly named Manhattan Project, an ongoing push to promote the drink that runs through early next year.

Two or three times a month, one of six participating Dallas venues will host the free event, whipping up the voluptuous namesake cocktail using whiskeys represented by project sponsor Republic National Distribution Company, such as Buffalo Trace and W.L. Weller.

“The Manhattan is the classic bourbon cocktail,” says Chris Furtado, Republic’s craft specialist. “We really want to emphasize the drink itself, and everybody’s interpretation of it.”

With the mass market kinder to vodka and gin, Furtado says, bourbon cocktails can be overlooked. “But for us classic cocktail lovers,” he says, “it’s a great drink.”

So far, the Manhattan has been celebrated at Cedars Social, People’s Last Stand and the Black Swan Saloon. This week, the tour hit Uptown’s Private/Social. Still to come are Hibiscus and Whiskey Cake before the tour circles around and each gets another shot at the deal.

“We’re showcasing bourbon and places that do it well,” Furtado says, nursing a Manhattan at Cedars Social. “I want people who come here to go to People’s Last Stand. I want people to think of Black Swan as a cocktail destination; they’re doing great stuff.”

The classic Manhattan recipe calls for a 2:1 rye whiskey-to-vermouth ratio. I typically make mine with a 3:1 ratio using Bulleit Rye and a few dashes of Bittercube’s Cherry Bark Vanilla bitters.

Japanese cocktail legend Kazuo Uyeda makes his Manhattans 4:1 and  suggests the ratio can go up to 5:1 before the whiskey’s “brooding, complex character” body-slams everything else in the glass.

Experiment with it yourself and figure out what you like. “Quite simply,” mixologist Regan writes in his classic The Joy of Mixology, “when properly constructed, it is the finest cocktail on the face of the earth.”

The next Manhattan Project event will be Tuesday, Nov. 20, from 7 to 9 p.m. at Hibiscus, 2927 N. Henderson in Dallas.
