Snoop Dogg, Texas bar industry help nation’s largest spirits festival mark 15th year

Could Dale DeGroff have imagined that, some 25 years after he began squeezing fresh citrus and making simple syrups in the service of better cocktails, he’d be among the elder statesmen of a 20,000-strong spirits festival? Yet there he was – King Cocktail! – with his signature wry smile, at New Orleans’ Hotel Monteleone, flaming orange peels and cranking out drinks like a champ at Tales of the Cocktail, the spirits festival that last weekend concluded its 15th run.

A bartenders’ walking tour: That’s how all this started. Back then a lot of people still thought of bartending as a temporary gig you did on the way to something else – but the spirits industry is now a $25 billion-dollar beast, and Tales is likewise a juggernaut, with people traveling to New Orleans from 40 countries for five days of booze-related workshops, career advice, happy hours, tastings, competitions, parties, bonding and networking. What was once a manageable, almost intimate gathering of industry professionals riding a wave of love for the craft and quality ingredients has, in some eyes, become too big for its own good, an overcrowded, over-the-top party of sold-out seminars, ever-accumulating wristbands and fewer one-on-one opportunities.

“Tales has become, to me, more about learning one-on-on through networking than in seminars,” said Brittany Koole, a bar manager and consultant in Houston.

It didn’t help that the stretch of Bourbon Street normally frequented by Tales-goers was a war zone of giant potholes, wire fencing and bulldozers. “I didn’t feel the same connection with the area,” said Justin Kallhoff of Dallas event space DEC on Dragon, who spent more time off the strip and less time dealing with the big parties.

Just the same, Tales carried on, the thus-far clear leader in the spirit-festival world.  As usual, attendees this year included a good number of Texans – bartenders, bartenders-turned-spirits-reps, bar owners, bar suppliers, bar goers and those who chronicle it all.

So there were Brian McCullough and Mandy Meggs of The Standard Pour in Uptown, who staffed a table at Saturday’s mezcal tasting room at the Monteleone. And Campari America rep Chase Streitz and Megan McClinton of Thompson’s, in Fort Worth, were among those who joined Jimmy Russell, the legendary master distiller for Wild Turkey, for dinner and whiskey at Cochon. “I was lucky enough to get to pour Jimmy a glass, and it was a once-in-a-lifetime experience,” said Streitz, formerly of Bulldog Gin, The Standard Pour and Sissy’s Southern Kitchen.

Cazadores Tequila partnered with the Bartender Boxing Organization to sponsor a battle between Houston and Los Angeles bartenders that culminated at Tales. And in a bowling event pitting bartenders from 14 cities against each other in the lanes, Team Texas took second only to Miami.

Major spirits companies, small-batch distillers and beverage-related producers also come to Tales to build or bolster brand recognition. But possibly the fastest growing group of attendees might be people who just like consuming and learning about spirits and the various things made with them – people like Jean Verhaar of Houston. “We are what you call cocktail enthusiasts,” she said, at the festival with pal Pam Stevens of New Orleans.

On Thursday, Steve and Beverly Davis of Mobile, Alabama, roamed a tasting room dedicated to pisco, the clear brandy native to Peru and Chile. “A little waitress at Galatoire’s told us about (Tales) some years ago,” Beverly said. The two have been coming ever since with friends John and Sue Lawyer.

“It’s just fun,” Sue Lawyer said. “There’s no purpose to it but to learn and have a good time.” She ducked over to one drink station where DeGroff, now widely considered the godfather of the modern cocktail renaissance, was busy making Algeria cocktails for the masses.

It was at New York’s Rainbow Room that DeGroff built a following by reviving classic, pre-Prohibition cocktails in the 1980s, a gig he landed a few years after being hired by restaurateur Joe Baum, the man behind the Four Seasons and other fine dining establishments; the Alegria – pisco, Cointreau and apricot brandy – was among the cocktails featured at Baum’s La Fonda del Sol in the 1960s, at a time when anything not a Manhattan or Martini was rare. Now DeGroff had revived it as the Algeria, with his own twist, for the pisco event. “Because (Baum) was my mentor,” he said.

Brands found clever ways to promote themselves, crafting whimsical and interactive tasting rooms, throwing happy hours, offering special product unveilings or cocktail-paired dinners – or, in the case of Amaro Montenegro, the excellent Italian bitter liqueur, having its master botanist demonstrate its 132-year-old production process using herbs and spices, an alembic, a boiler and a macerating device.

Jagermeister, the ubiquitous digestif now angling for a piece of the craft-cocktail craze, recruited Gaz Regan, author of The Joy of Mixology, for a happy hour at Fritzel’s, the Bourbon Street jazz pub where LSU students made Jager popular in the late 1980s. And then threw a huge party afterward.  And there was Diageo, the giant spirits company behind brands like Tanqueray and Don Julio, scoring Snoop Dogg for its own beats-heavy Friday night bash.

Workshops this year included explorations of ingredients like grains and bitter gentian in spirits and liqueurs; the use of technology such as centrifuges behind the bar; and the rising popularity of umami flavor and low-proof drinks.

Cocktails were plentiful, served mostly in small plastic Tales cups, and it was wise to heed the oft-quoted Tales adage “you don’t have to finish that” while collecting grab-and-go bottled water along the way. That said, I did find the bottom of a few superior creations –my favorites being Laura Bellucci’s House of the Rind, a dessert-like mix of Earl-Grey-infused honeysuckle vodka, lemon curd and citrus-chamomile bitters served at Sunday’s “Legs and Eggs” burlesque brunch at SoBou; and from Aaron Polsky of Los Angeles’ Harvard and Stone, the Precious Punch served at Thursday’s pisco tasting room, featuring pisco acholado, apricot liqueur and amaro.

Camaraderie is what keeps people coming back to Tales, and festival vets saw old friends while newbies made new ones. Second-timer Ashley Williams, a Bols Genever ambassador who tends bar at Filament in Dallas, was looking forward to being in New Orleans and meeting fellow ambassadors. What had she learned from her first go-round?

“Pace yourself,” she said. “You don’t have to do everything. There’s so much going on. Take some time to just go sit in a park.”

Being in the French Quarter, amid the stilt-walkers and human statues and little kids drumming on plastic buckets, it was also worth revisiting gems like the rotating Carousel Bar, grabbing a frozen Irish Coffee at classic haunt Erin Rose or nestling in at the French 75 Bar at historic restaurant Arnaud’s, which recently won the James Beard award for bar program of the year.

Around the festival’s midway point came the U.S. Bartenders’ Guild’s beloved annual Thursday midnight toast, on which Texas naturally has put its stamp over the years with waving Lone Star flags and choruses of “Deep in the Heart of Texas.” This year’s spectacle was a bit more subdued, given that the whole shebang had to be relocated from construction-torn Bourbon Street to the second-floor confines of Bourbon Cowboy Too. Nevertheless, Texas endured – and somehow so did Tales, which will power on to see another year.

National cocktail conference gets a Lone Star welcome

You could say that Texas did itself proud in New Orleans yesterday, but then again pride in Texas has never been in short supply. Anyone taking in Tuesday’s festivities in front of the venerable Hotel Monteleone would have seen a state standing as one, with two dozen bartenders and liquor promoters firing a collective bar gun of Lone Star hospitality.

The “Texas Tailgate” — among the kickoff events for the 11th annual Tales of the Cocktail conference — served up a double-digit selection of punch-cooler cocktails, plus a handful of Texas distillers and brewers offering samples of their work. Breaking a sweat in the NOLA humidity, they poured: Charlie Papaceno of Windmill Lounge, Creighten Brown of the late Private/Social, Sean Conner of Plano’s Whiskey Cake and a smattering of representatives from the Cedars Social and Bar Smyth.

There was the bourbon-fired Leather Face Mask, from Bonnie Wilson of The Ranch in Las Colinas; the tiki-ish Paradise Dream from Republic Distributing’s Chris Furtado, made with Mount Gay small-batch Black Barrel rum; and coolers of Shiner beer. Brisket was served. Austin’s Treaty Oak distillery handed out sips of two limited-release products – Red Handed Bourbon and Antique Reserve Gin – scheduled to be available by year’s end.

“Every good party needs a good kickoff before the festivities,” said Standard Pour’s Brian McCullough, president of the North Texas chapter of the U.S. Bartenders Guild. “We’re just celebrating what we do in Texas.”

And apparently, that’s good times and drinks: McCullough’s Garden District Punch was among the day’s best concoctions, a tart and refreshing burst of Dulce Vida tequila blanco, watermelon, raspberry, strawberry, lemongrass, jalapeno and red wine vinegar.

Suddenly, Papaceno’s voice boomed, as if over a megaphone: “WE HAVE EIGHT MINUTES UNTIL THESE COCKTAILS SHUT DOWN, SO PLEASE, DRINK HEARTILY WITHIN THOSE EIGHT MINUTES.”

The able and willing complied. After all, it was barely 4 p.m.

“Yeah!” someone shouted. “Texas!”

“Texas has four little gems,” said Juan Pablo DeLoera, the state’s rep for Milagro Tequila, referring to the cities of Dallas, Austin, Houston and San Antonio. “There’s a lot of talent and passion. It has the right to show what it’s made of.”

Here’s what you need to know about New Orleans. While it may not be at the forefront of the nation’s cocktail revival, it doesn’t need to be: The city has earned its spot in the cocktail pantheon and, as anyone who’s been to the French Quarter knows, drinking runs through its veins. The city is home to several classic drinks, including the mighty Sazerac, the venerable Ramos Gin Fizz and the luscious Vieux Carre.

In short, all you little cocktail whippersnapper scenes with your fancy infusions and dapper vests and shiny bar equipment can brag all you want to, but New Orleans is, along with New York and Chicago, one of the original cocktail gangstas that paved your way.  Cocktails ain’t nothin’ but a thang here. That’s not to say there aren’t some great new cocktail bars in NOLA: Cure and Bellocq have earned much national acclaim, and Barmoire plans to visit them both. But it’s places like Arnaud’s French 75, Antoine’s Hermes Bar and the Court of Two Sisters that reflect a craft cocktail culture before its modern rejuvenation and one reason The Museum of the American Cocktail is based here.

And that’s why, for the 11th straight year, the Tales of the Cocktail conference – the nation’s largest such event, founded by Ann Tuennerman – is now underway in New Orleans again, and Barmoire is along to bring you the action live. OK, well, not live, and maybe not even immediately, but eventually and eagerly. Over the next few days, the French Quarter will be crawling with bartenders and spirit reps and cocktail enthusiasts from all over the country – all here to drink up a lineup of informational seminars, classes, excursions, tasting rooms, dinners and, of course, parties designed to promote America’s thriving cocktail culture.

The Texas contingent is huge this year and well represented in the festivities, from bartender competitions to today’s tailgate event outside the flagship Hotel Monteleone and, as Barmoire noted earlier, Friday’s epic Bare Knuckle Bar Fight national bar vs. bar vs. bar throwdown that will feature Dallas’ own Bar Smyth.

Barmoire was here last year when Dallas made its first-ever conference splash with a festive tasting-room event, but there was so much more, including Japanese Scotch tastings, a Brugal Rum party bus, burlesque, and even a sighting of cocktail legend Dale DeGroff, the man who essentially launched the craft cocktail revival.

Dallas bartenders make a Lone Star splash at national cocktail festival

As Private/Social’s Rocco Milano put it, things went wrong. Campari bottles broke. Ordered produce was nowhere to be seen. A batch of concentrated blackberry mix blew up in Whiskey Cake bartender Bonnie Wilson’s car.

Whatevs. Texas knows how to go big, never mind the circumstances. And given their chance in the spotlight, Dallas bartenders left their Lone Star mark on this year’s 10th annual Tales Of The Cocktail conference in New Orleans: No one who stepped into the Iberville Ballroom of the Hotel Monteleone could leave saying they didn’t have a good time. OK, maybe whoever had to clean up the blackberry juice. But on the whole. Seriously.

Drinks flowed. Multitudes appeared. Moods lifted. The Chesterfield’s Eddie “Lucky” Campbell sang a song. And this was all before noon.

“Come And Get It! Cocktails Texas Style!” was the title of the Wednesday morning tasting event, and despite the tricky A.M. draw on the festival’s opening day, word in the stairwells was that the session was the rockingest party in its time slot. An all-star crew of Dallas barmen and women shook their stuff for a packed room of conference attendees: There was Mike Martensen of The Cedars Social, Oak’s Abe Bedell, Standard Pour’s Brian McCullough, Jay Kosmas of Marquee Grill & Bar… the list goes on.

But even before the doors opened at 10:30 a.m., things looked a little shaky, and not in the diffused citrus and disintegrating ice-crystals sort of way. A day earlier, Bonnie Wilson had arrived with bottles of blackberry puree corked and sealed by Whiskey Cake’s Sean Conner, then checked into the hotel. Sugars fermented. Pressure built. The next morning, they opened the car to find that streams of puree had burst through the box overnight. “It looked like a paintball gun had hit the roof,” Conner said.

One bottle survived. And now it was Wednesday morning and the Dallas bartenders frantically readied workstations, setting up tiny sampler glasses, organizing their mises-en-place.

Then, suddenly, Bonnie Wilson’s voice cut through the room: “Oh, Anthony!”

Then, anyone who turned to watch, which was everybody, saw a blast of burgundy spewing in a volcanic rush from Conner’s surviving bottle of berry mix, which Whiskey Cake’s Anthony Krencik had just uncorked. Before they could stanch the flow, much of the mix had doused them and the hotel carpet in a bath of goopy concentrate.

Kosmas, as always unflappable amid the chaos, walked in two minutes later. “Oh, another explosion?” he said.

Bonnie Wilson’s “Bird” was a fetching blend of Evan Williams single-barrel whiskey, black tea, blackberry puree and Benedictine topped with sweet vanilla cream and mint leaf.

Meanwhile, Bolsa’s Hilla had had to scramble when the produce he’d ordered never showed, forcing a last-minute cab ride to the market. His planned drink – the Cherry Pit – became, well, something else. “You can call it the Plum Pit,” he said.

Before long the troublesome juju was lost in an increasingly happy flow of people, who sampled drinks ranging from Abe Bedell’s Barbados Breeze – a frosty blend of Mount Gay XO rum, basil, ginger, lime, pineapple and banana-coconut sorbet – to Kosmas’ Oaxaca Sour, a deliciously smoky blend of Ilegal mezcal, Texas grapefruit, honey cordial, egg white, lime, barrel-aged bitters and a sprinkling of nutmeg.

Martensen and Cedars Social owner Brian Williams had recreated a mini version of their bar in the ballroom, propping up signature menus and a small array of books on the table to evoke Cedars’ study-like atmosphere. Martensen had gone as basic as possible. “I’m doing the original margarita,” he said. “We want to represent Texas, right?”

Martensen has been coming to Tales for years, and Williams joined him starting four years ago. But Dallas was barely represented otherwise, and today’s splash showed how far the scene has come.

“It’s good representation for Dallas,” Williams said. “We have so many chain restaurants, and people get caught up in the whole restaurants-per-capita thing It’s good to let people know we’re out there.”

The Cedars Social’s Mike Martensen made margaritas. “We’re representing Texas, right?”

Eventually, Chesterfield’s Campbell – who was flanked by New Orleans native and Dallas chef David Anthony Temple, he of the festive “underground” dinners – would make a prideful speech and belt out “Deep In The Heart Of Texas.”

You could say Private/Social’s Milano was, well, moved. “As I look around the room, this is, to me, a minor miracle,” he said. “This is awesome. We are not a backwater third-tier market.”

And Krencik, in the conference T-shirt he’d quickly bought to replace his berry-drenched top, added this: “Texas is one of those states everybody knows, but they probably don’t expect us to bring a cocktail game. But from five years ago to now, it has just skyrocketed. We’re, like, the underdogs, coming out and showing that we can shake.”

The fun showed no sign of slowing down until conference officials finally shooed everyone out of the room. As the buoyant Dallas bunch headed onto the streets of the French Quarter to celebrate at nearby Mr. B’s Bistro, a hotel staff person came up to Bolsa’s Hilla.

“Sir,” she said. “Your produce is here.”
